A durian is like thanos. It keeps half of the population while wipes out the other half. Only around 50% of people are chosen by the durian to consume it. Congrats to those 50% of the population chosen by the durians!

Can agree with gulai tempoyak patin (sharkfish cooked in fermented durian curry-gravy). For some reason, if you ferment the durian flesh, it would lose its pungent smell and becomes more sweet, fragrant and also an ultimate umami bomb. All my friends who hate durian, will always love any food cooked in tempoyak like gulai tempoyak patin and sambal tempoyak ikan bilis (anchovies simmered in fermented durian sambal). Oh, and petai's notoriety is not because of the smell when you cook it. It stems from what happen AFTER you eat. The moment you take a piss or poop, your toilet will definitely smell like petai lol. But be that as it may, petai is highly nutritious so I would recommend people to try this if you go to Malaysia.

I bought Durian once for my brothers and I to try. We cracked it open on the back porch and gave it a shot. We all enjoyed it, and I loved it! I personally don't think it's as offensive as people make it seem. We froze what we didn't eat, and had some the next day. The way the ice crystals formed made it like a durian popsicle and it was SUPER good!

In Germany, there are many recipes featuring offal, such as sour lung, calf kidneys, beef liver, stuffed tripe, tripe soup, lung stew, pork heart ragout, liver dumplings, blood and liver sausage, stuffed pig stomach, ox muzzle salad, pan-fried sweetbreads, head cheese made from pork head, tongue ragout from veal or beef, skirt steak, blood sausage hash, cooked pork snout, and many more. That's AR Patin Tempoyak, at Jalan Genting Kelang. My only complaint is they should add in daun kesum (laksa leaf) to make it taste better. Some prefer to add torch ginger, galangal or lemongrass. Much better than patin, but more expensive is kelah. It's heavenly, but it's not available in KL. Only in Pahang. 😊
@exodus2oo5 сағат бұрын
Beef lung has to be eaten freshly cooked/fried, people don't like it because its been left to sit out in the open for too long that it toughens up becoming chewy and losing flavor like fried chicken, they are often refried which doesn't help it. Otherwise freshly cooked its amazing.

For Malaysian, food is very divisive. For me I can’t eat cincaluk (fermented shrimp paste) and any dishes made from cow stomach like kerabu perut (stomach salad) and soup gearbox (bone marrow) are not my favourite. But I like ikan pekasam and ikan terubuk masin and shocked to find out quite a number of Malaysians hated this fermented fish.

the thing about ikan patin is there's 3 types of patin available in malaysia Pool: the cheapest one you can get, bred in the pool Caged: Bred in the cage which was placed in the river and eats stuff that was given by the cage owner Wild: Usually roams freely in the river and eat everything, including fruit which gave its meat a better taste than the other two If calvin said the fish is oily, i suspected that they probably using the pool fish..because they got more fats compared to the caged and wild one as the fish swims in the pool without any strong current like the river...that is the moment i realized that even fish needs exercise to reduce fats 😂

the thing about tempoyak is, it can almost be an opposite of durian. most people who likes durian, like myself, actually can't stand eating tempoyak. the taste makes me gag. but people who can't stand of durian, they actually can stand eating tempoyak. plus fermenting durian into tempoyak can be dangerous as it released a lot of gas which can make the container pressurized and if you are not carefully, it can shoot of the lid when you open it.

In our culture we normally used to eat stink bean with its flesh not just the bean, but we scrape the outer green layer (which taste really bad) with a scraping tool or a sharp spoon leaving only the white texture. And we usually prefer to eat them while they were young and not yet ripe, even when the beans are very small. It taste much better with the flesh

In Germany there is a preparation of beef lungs called "Saure Lunge", some kind of traditional poor people's dish. It is boiled in vinegar, water and the usual soup greens and spices. As a child, I'd rather let my parents beat me up than eat it. Now I've been a vegetarian for 45 years. But I think it is very sustainable to eat all parts of the animal, if you eat meat at all.
