Hi Julien, as someone from Naples, Italy I could talk at great lengths about how great Naples pizza is but I am going to try to keep my comment short-ish and to the point. Neapolitan pizza and Italian food in general, are based off the concept of "less is more". We are blessed and lucky to be born on a peninsula in the middle of the Mediterranean sea where we can grow pretty much anything. Traditional cuisine relies on fresh fruits and vegetables that are in season or canned and preserved once they are perfectly ripe. Our cheeses, meats, and oils are produced across the whole peninsula and each region has their own specific variety. The majority of the traditional dishes usually contain a handful of fresh ingredients that shine in flavor because they were picked at the right time, grown in the right places, and cooked in a simple way that enhances the natural flavors. Back to Neapolitan pizza: pizza napoletana is protected by very strict rules and processes. Usually we limit our toppings to fresh local veggies, local light cheeses, San Marzano Tomatoes, and Extra Virgin Olive Oil "a giro" (a swirl). That's it. Simplicity is key. The whole pizza is cooked in just a couple of minutes in a wood fired oven which cooks the pizza at very high temps (900F) and gives it a char reminiscing of a leopard print. Neapolitans are very proud and jealous of their pizza! To us it's not just food but it's a display of traditions, culture, regional protected ingredients, and regional craftmanship! Did you know that many Neapolitan pizza places will import their handmade oven straight from Naples? Next time you visit the place ask them about their oven, I can guarantee they will be proud to talk about their jewel! Thank you for using your platform in a way that displays my culture and my heritage, too often tradition and simple high quality foods are washed away by "food porn".

The classic example is carbonara: there's a traditional recipe that shouldn't be messed with. If anyone wants to make a carbonara inspired dish, they can and they should acknowledge that the dish takes inspiration from tradition but it doesn't follow it or replaces it.
