When I say "dead", I mean that the organism as a whole is functionally dead, with no consciousness or coordination. Yes, the tissue is still alive, but the octopus itself is "dead" as the brain has been removed. It's like seeing a dead cow's heart beating after it has been decapitated. The cow itself is dead, but the heart tissue is technically still alive. In any case, the organism has moved on to the next life.

Moving since it was probably, and should have, been cut up recently. It's like going to a sushi restaurant and seeing that slice of fish twitch on your dollop of rice. It's a sign of freshness. My Korean mom hates this dish, though. She thinks it's pretty disgusting how the suction cups get stuck in your mouth which is kinda funny since she grew up eating seafood.

"Live Octopus" is a bit of a misnomer here as the limbs are severed from the brain and this is simply the activation of the bioelectical currents energy stored in the muscle fibres reacting to the salts which causes the energy to release, resulting in the involuntary twitching similar to that of Frog Legs. There is actual live versions of the dish, which I abhor since the point of food is to kill and survive not to relish in it's suffering...though "some" say it increases the flavour.

The octopus is dead, its so fresh, that the neurons are still firing using the last stores of ATP energy in the muscle tissue, which is causing the moving. Its similar to cutting off a chickens head, or moving frog legs in salt.

One hopes. Hard to guess in human terms. It's definitely still capable of reflexive movement, at least, and therefore at least the basics of pain. Whether any individual part still has the capacity to comprehend what said pain actually is would be pretty impossible to tell.

Actually, not so much. In octopi, more than half of the neurons in the central nervous system are located in its tentacles, very unlike a cow. So really, this is more like a cow's head blinking after it's been decapitated; not alive for long, but still alive and processing information in a limited capacity.

TL;DR version: When a creature dies, its neurons don’t stop working right away. So long as there is still enough energy in the cells, the neurons will work. Said neurons react to one key ingredient: salt (soy sauce is very salty). Salt - or sodium chloride - is chock full of sodium ions. This overwhelming dose of sodium ions is enough to trigger the still-working neurons into firing, signalling the muscles to contract.

Lol, the people that claim that because the limbs are separated from the head, the octopus is dead and feels no pain are kinda wrong. The brain of an octopus is spread throughout its body. Each arm has it's own part of the brain as such. And octopuses do feel pain!
