Trieste is more like Slovenia than Italy. I mean it was part of Austro-Hungarian empire untill it colapsed. I was once there. If I remember right local dishes it has to do something with some kind of cheese and meats.

Certainly wasn’t the case when I was in Italy but we used the method of using reviews to find a restaurant then asking the chefs/owners or waiters for recommendations on where to go eat next. They didn’t try to send us to super expensive places or literally ever the whole month I was there was never recommended the most expensive thing on the menu. Maybe if you go to the tourist traps they do that

ive worked in several restaurants and was never told this. also most normal people wouldn’t do this as it’s usually very transparent. seeing as she’s yet to get any high end steaks recommended to her i don’t think this has been her experience.

This is strictly an American thing, typically by servers since they usually get paid according to what you spend, i.e. 20% is customary in many places. This is not the norm outside of the US.

This makes absolutely no sense because in general the most expensive thing on a menu ends up having the smallest profits. In Italy you'd want to upsell pizzas as they cost very little to make, so good profits.
