Kim im from new-brunswick and we eat all of it. What you call eggs are not eggs it’s what we call in french « rave et fort » i mean what’s green and red inside of the lobster. You can tell the diff.. by turning the lobster on it’s back and flicking the firsts sets of kind of things that helps them move around the bottom of the ocean, if it’s hard its a boy normally and if it’s flexible its a girl that means that it has the red and green stuff that you call eggs 😂 pls ask me more if you want to we are a tiny place of recommended lobster for how we cook them and prepare them.
