How To Make Egg Masala Curry:
Ingredients:
6 boiled eggs
½ tsp Kashmiri chili powder
¼ tsp turmeric powder
2 tbsp oil
1 large onion, chopped
1 tbsp ginger garlic paste
2 medium tomatoes, chopped
2-3 dried red chilies
1 tsp salt
1 tsp coriander powder
½ tsp cumin powder
½ cup cream
½ cup water
Chopped chili and fresh coriander leaves for garnish
Preparation:
Prepare Eggs:
Peel the boiled eggs
In a bowl, mix the boiled eggs with ½ tsp Kashmiri chili powder and ¼ tsp turmeric powder until evenly coated.
Heat 2 tbsp oil in a pan and fry the eggs for 3 to 5 minutes until lightly golden brown. Remove them from the pan and set aside.
Prepare Onion Tomato Paste:
In the same pan, add the chopped onion and cook for 6 to 8 minutes over medium heat until translucent.
Add 1 tbsp ginger garlic paste and stir-fry for 1 minute on low heat.
Add the chopped tomatoes and cook for 5 minutes on medium heat until they soften.
Transfer the onion tomato mixture to a grinder and make a smooth paste.
Cook Onion Tomato Paste:
Heat 1 tbsp oil in the same pan and add 2-3 dried red chilies.
Add the onion tomato paste and mix well. Cover and cook for 5 minutes on low heat.
Add Spices:
Uncover the pan and add ½ tsp chili powder, 1 tsp salt, ¼ tsp turmeric powder, 1 tsp coriander powder, and ½ tsp cumin powder. Cook for 3 to 4 minutes on low heat, stirring occasionally.
Add Cream and Water:
Pour in ½ cup cream and cook for an additional 2 to 3 minutes, allowing the flavors to meld together.
Add ½ cup water and mix well to adjust the consistency of the curry.
Final Assembly:
Gently add the fried eggs to the curry mixture, ensuring they are coated evenly.
Cook for 2 to 3 minutes to allow the eggs to absorb the flavors of the curry.
Garnish with chopped chili and fresh coriander leaves.
Serve hot with chapati, naan, or rice.
