Egg puffs are a popular snack, especially in Indian bakeries. They consist of flaky pastry filled with a spiced egg mixture. Here's a simple recipe to make egg puffs at home.
Ingredients:
the Puff Pastry:
Store-bought puff pastry sheets - 1 pack (usually has 2 sheets)
You can make puff pastry from scratch, but using store-bought sheets saves time.
For the Filling:
Eggs - 4, hard-boiled and halved
Onion - 1 large, thinly sliced
tomato - 1 small, finely chopped
Ginger-garlic paste - 1 teaspoon
Green chilies - 5 finely chopped
Red chili powder - 1 tablespoon
Turmeric powder - ¼ teaspoon
Garam masala - tablespoon
Salt - 2 teaspoon
Oil - 3 tablespoons
Instructions:
1. Prepare the Filling:
1. Heat oil in a pan over medium heat.
2. Add sliced onions sauté until they turn golden brown.
3. Add ginger-garlic paste and sauté until the raw smell disappears.
4. Add chopped tomatoes (if using) and cook until they turn soft.
5. Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
6. Cook for another 2-3 minutes until the masala is well-cooked and the oil starts to separate from the mixture.
7. Add the hard-boiled egg halves to the masala and coat them gently without breaking them.
8. Turn off the heat and let the mixture cool down.
1. Preheat your oven to 180°C
2. Thaw the puff pastry sheets according to the package instructions (usually takes 20-30 minutes at room temperature).
3. Cut each puff pastry sheet into squares or rectangles, depending on the size you prefer.
4. Place a spoonful of the egg filling in the center of each puff pastry square.
5. Fold the pastry over the filling to form a triangle or rectangle, and press the edges together to seal. You can use a fork to crimp the edges for a decorative look.
6. Brush the top of each puff with a egg or butter to give them a golden finish.
Bake the Puffs:
1. Place the prepared puffs on a baking tray lined with parchment paper.
2. Bake in the preheated oven for 15-20 minutes or until the puffs are golden brown and crispy.
