Congratulations on your KitchenAid Mixer! Mine was a gift from my Mom and Dad when I graduated from Baking School back in 1984. I have used mixers bigger than me and I still love what I call my baby mixer.

Listen you guys, I’m not all the way sold on the plain PSMF bread even though I LOVE Maria Emmerich. So when I saw this and heard Anita rave about the cinnamon loaf I thought, “how good can it be?” I whipped up a batch and made some hotdog buns and with the remainder made a loaf of the cinnamon. It was only with the left over batter so it was only about 1/2 full. Hubby and I finished the loaf in one sitting, warm out of the oven. It was so good with every bite we were like “THIS IS AMAZING.” We tried it plain and it’s super tasty but our favorite way is with a bit of salted butter (tough to do on a PSMF day but I’d eat this bread even on a regular day! It’s that good). Feels like a cheat! No lie, the swerve melts and mixes with the cinnamon to make like cinnamon roll goo. This is going to make my protein sparing days so much easier!!! Thank you! I am certain it would taste incredible with a simple glaze or cream cheese frosting! Make it!!!!

I also have the white one. I bought it new at Walmart and I was sooo nervous on such a biggg purchase! I definitely got my money's worth on this. Highly recommend. Congratulations, Anita, on a great purchase! If you take that whip off and whack it (gently) against the metal bowl a couple of times, you'll get more batter off without scraping. You'll be used to it in no time. Love the red!

Love my Kitchen Aid mixer too. Have had for a very long time but happy I made the purchase. I saw the interview that Maria Emmerich did with Rachel and Joe from 2 Krazy Ketos and she stated that the PSMF days were to have NO dairy. Everyone can follow as they choose to do but this came from her. Everything looks delicious! Keep doing what you are doing. So appreciated.

These all look so good! I'm waiting for Amazon to send the egg white protein powder, so I can't try it yet. I've had my KitchenAid mixer since 1999 and my mother has one she bought in 1969. They are well worth the money, they'll last forever. Can't wait to try some of these!

The lever on the other side of the mixer locks it in place to keep it from jumping up during mixing for safety. Hope this helps. Love your recipies

Congrats on the new mixer. Yes we see that new luv in your eye. Maria E did an interview with 2krazyketos about additions to the recipie. I still do the smaller 6 egg size recipes because I found the loaves fell while waiting for the buns to be prepped.

I love the red mixer! I have the boring white one. I received as a wedding gift forever ago. I still love it so much! You can get fun attachments like grinders and sausage stuffers. On my way to the kitchen to get mine dirty :) I really like the cuts to the chicken timer-cute and funny!

So happy for you! I have had my kitchen aid mixer 40 years, was a wedding gift. Still going strong, has discolored slightly,(beige was the color back in the day). A little duck tape over the attachment hole on front, the little silver disc kept falling into my batter.

I finally got my egg white powder and every thing to make the bread and my 30 year old kitchen aid decides to poop out on me so i finished it out with my Kitchen aid hand mixer i found at a thirft store for $3 hand mixer it had no beaters. Bread turned out delish . I love the red mixer i may have to get a new one that is the color i will get.Love your cooking videos .

Genius idea with the upside-down pan for the silicone pans..I couldn't fit mine into my pans and was baking them 1 at a time.

Hi from Arizona! Love your new mixer! Omg,on Janet's cinnamon bread, I too love it- but I used sukrin gold in my cinnamon mixture cause, why not 😁 I watched Nili's video too, I have been using allulose for 3 yrs. now so I never realized the difference it makes, but I then made some with swerve - 😬If I had started my psmf bread with swerve I'm not sure I would have ever made more- It's that big of a difference!!

Your new mixer is so pretty. I only have the hand mixer as I don't have room/counter space for a stand mixer. By the way...did you pre-cook the hotdogs or just cut them up and put them on the bun?

I hear you, I don't have room either. Something's gotta go! Yikes! I didn't precook the hot dogs but they were steaming hot after 30 minutes in the oven and being cut into small pieces. You can certainly precook them and I might do that if I make the whole hot dogs in a bun that I was thinking about.

OMG! I made the same things a couple of days ago…except no hot dog buns….I made each recipe separately, but next time I will use your method which is a double PSMF bread recipe! I’m still eating your collagen cake…I just made a vanilla cake and it’s yummy!

Yes, it is downright dangerous! I love the pizza muffins, I bring 2 to work with me for lunch and it's just the right amount! (With a piece of cinnamon bread on the side)

@@joelyisdoingherbest I do eat them on a PSMF day although I heard some people don't do dairy on PSMF. I use turkey pepperoni and low fat mozza. Enjoy your new stand mixer for many years to come. I still get a slight egg taste in my bread. I will reduce egg white protein powder to ,3/4 ,cups or less. Can you still taste egg in the pizza . muffins you made??

I don't taste egg in the pizza muffins at all, that is where the sauce and pepperoni really help!

I didn’t know you could put silicone pans directly on the oven rack. I thought you had to put them on a baking sheet. Thanks for sharing!

The reason behind that is because of spills. I always put the large pans on a sheet because they are so floppy. But the bread pans that I have are very sturdy on the bottom so I don't worry about those at all. Thanks so much for watching!

I only use 2 T of Allulose and my breads turn out great. I only use 3:1 of the eggs/egg white protein powder. For example, I use 1 C Egg Whites and 1/3 C of the Egg White Protein Powder. I love the texture and it doesn’t choke me. To me, 1:1 is so dry. I think I will do a 3:2 and see which I like best. (1 C egg whites: a scant 2/3 C egg white protein powder)p, which is just about what you did, I believe.)

Yes I've been doing 2/3 c powder to 1 1/2 c egg whites and I'm liking that. But I think it's going to be a little different for each person! And yes, agree about the allulose, 2 tbsp is enough!

Adding all ingredients at once makes them a bit squished I have found. I like adding in 2 steps. Your mixer is beautiful. Some day maybe I will be able to get one. Lucky you! And the allulose helps in the browning.

Yes, I agree for the loaves it's probably better to get those eqq whites as stiff as possible first. For the flatter things like pizza crust and buns, I'm not as concerned about it. Hope you get your dream mixer some day, took me 40 years to do it! Thanks for watching!

If you have estate sales in your area (rather than just garage sales) you can often pick up a Kitchenaid mixer for a lot less than new. As long as they weren't used for lots of heavy bread or cookie dough, the gears last forever and they are repairable. Glen and Friends cooking show on YT did a video on how to take them apart and repair them. But so many people only pull theirs out once or twice a year to make a birthday cake, the old ones are often in almost new shape - another tip - stuff that doesn't sell at an estate sale is often donated to the local shops that that donations. One in my area benefits the local animal shelter and I try to shop there for kitchen stuff; recycling and benefitting a good cause at the same time.

I'm in Western Canada and I've bought Rao's from the IGA, Save on Foods and Costco! Oh and also Nature's Fare. Good luck, I'm sure it's more readily available now than it used to be. If you can't find it locally check Natura.ca.

I love Love LOVE your new mixer!! 😍 It's exactly like mine, except I believe yours is Empire Red and mine is Candy Apple Red. 😁 (They were out of Empire Red at the time... 😔) Red is one of my two favorite colors, along with purple. 😊 The breads and hot pocket buns look delicious! I believe the xanthan gum gives a bit more stability to the meringue, but I'm sure it tastes the same. 😊 Love ya, girl! ❤💙💜

@@KetogenicWoman yes, Indigo Nili tried it without the xanthan gum but dumped everything in at the beginning for a test. Her loaf's sides caved a bit, so she wasn't happy with the results, so she's going back to adding the egg white powder at the end. Yours looks great without the xanthan gum, so I'm not sure why hers did that... 🤔

@@goodnewsketo178 Definitely so much better! At first I wasn't happy because my $14.95 bag of allulose turned in to $18.69 Canadian but then I had to remember that I paid $20 on Amazon for a bag half the size and waited a month to get it. So I'm going to stop whining and be happy!

Mine is the tilt head, so you lift back the head to insert the whisk, easy peasy! If you look at the pizza bun video I made, all the ingredients and macros are right there, I used reduced fat mozza. My mixer is this exact one: amzn.to/3kU3YcP

No problem, the pizza bun macros I worked out using low fat mozza and turkey pepperoni. It is 77 Calories, 13.2 g Protein, 2g Fat, 2g total carbs,0.2 Fiber for 1 bun using the recipe here: kzbin.info/www/bejne/p3jaemSdhrSbqZI

I also worked out the cinnamon bread macros for myself based on cutting it up into 8 pieces: Each piece is 26 calories, 5.7g protein, 0.4 total carbs, 0.2 net carbs and 0g fat.

Hi Anita. The Cinnamon bread had less volume probably becouse some spices absorbes water from the egg-mix. Same result happens to me every time i try with more garlic powder or other spices in bigger proportions. Just my thought.....what do you think about?

You can cut the allulose down to 2 Tbls and save on the cost of the allulose and it still browns

Thank you for another wonderful video Anita! I was wondering, after your experiment today, would you use xanthan gum in future PMSF bread or will you plan on omitting it in all of your future PMSF bread baking? One last question...do you think mixing the brown sugar/cinnamon INTO the bread mixture would also work or would it cause problems and give a negative result? Thank you!

I think I will probably for now leave out the xatham gum going forward. I didn't really see a difference in the bread. I think you could mix the cinnamon mixture in if you want, I liked the layers of it though.

Anita, I'm just starting the PSMF Bread journey and noticed your egg whites are from Costco, Kirkland Brand. I just purchased a 6 pack and noticed after I brought them home they're pasteurized and not recommended for whipping. Are yours pasteurized?

I used carbmanager to calculate mine but I entered it the way I made it, which could be different from you or Janet Greta. It's based on using 1/2 the recipe in a 8x4 loaf pan, cut into 8 pieces and I only use 1 tsp cinnamon. So keep that in mind! Per piece: Calories 25, Protein 5.7, Fat 0.1, total carbs 0.5, net carbs 0.3

Did you just say your egg whites are frozen? I didn't know you could freeze those- and they whip after? Do you freeze in the carton or put it in something else?...I appear to be fascinated, can you tell? Definitely interested in whether or not the xanthan gum makes a difference, I've yet to use it in my psmf bread - your thoughts, please

Lol, you ARE fascinated with it! But yes! My sister mentioned it to me one day that she keeps hers in the freezer and I was blown away. I was buying the Costco 4 pack and taking up all that room in my fridge! I just freeze them in the carton and take them out of the freezer the day before I need a carton. Honestly I can't tell the difference with the xantham gum so I will probably not bother any more.

I usually make 2 loaves of bread out of the recipe that I did today and one entire loaf is 209 calories, 43g protein, 0.1g fat, 3.6 g total carbs, 3.3g net. So since I used a smaller amount of the batter, it will be even less. one slice of the plain loaf of bread is barely worth counting! it would be 20 calories, 4g protein,no fat and 0.36 carbs if you get 10 slices from a loaf.

When I make Maria’s recipe it always has a foam texture, like couch cushion foam. I can’t figure out what I’m doing wrong. Maybe I’m cooking it too long??? I wonder if adding the xanthan gum, allulose and nutritional yeast will give me a better texture. Thank you so much for your helpful videos.

I find using less egg white powder definitely improves the texture for me. And I am adding lots of different things now, check out my Italian Loaf recipe, that it my favorite PSMF bread so far!

Yes, I do tend to use less powder than Maria's recipe. I think it's ok to fiddle with the amounts until you hit that perfect texture that you like!

Does the Swerve brown sugar give the cooling affect when eating the bread?

It doesn't for me, but I have read somewhere that 25% of people get that cooling effect. So you will just have to try and see. Other brown sugar alternatives is Lakanto and Besti allulose brown sugar.

Yes I do like it very much! It is soft and packs like real brown sugar, but I do think the more granular brown sugar subs will work well in this recipe too!

I keep everything in the fridge. Things like pizza buns and cinnamon buns and bread microwave well (just a few seconds per slice/piece) and the bread softens up in the fridge which I like too!

I have only frozen buns so far, not the bread yet. When they are 100% cooled down I put them in a freezer bag with parchment paper in between each bun because they stick to each other. When I know I will need something for the next day I take out how ever many buns I need and thaw them in the fridge.

I do not count them for the natural sweeteners like erythritol, stevia, allulose or monkfruit. Something like Splenda I would for sure.

So my bread keeps rising in the oven doubling in size in the beginning and then shrinks towards the end of cooking to like a third of the normal size... any tips???

That's actually kind of normal with this bread. Try using wooden skewers in the batter, place 3 skewers in line down the middle of the loaf, it helps keep the bread from falling too much.

Are you able to choose the Black & White setting on your printer? I discovered this recently when I had the exact same problem and that worked! I will have to figure out if the recipe card plugin has a setting to not print in light green! I hate that it does that!

It seemed ok! I didn't see a difference. I tried it because in the beginning I was having some trouble with the texture of the loaves and I thought it might help.
