I am very impressed with your KZbin video, and your ability to explain and demonstrate the steps so succinctly. You innately posses wonderful teaching skills. All professions need leaders who have this natural ability. As a Master teacher for 30 years, I was a mentor for student teachers and first-year teachers as well as teaching my students. Part of my job was to help the future and new teachers to communicate better with their students.....just as you demonstrated. IMHO, your presentation was better than some of the professional chefs on TV. Your presentation perfectly showed others how to successfully make great bread. So many people use too much flour when kneading bread, and they knead the bread too much. This results in a less than desirable texture. Genius idea for you to press down on the rolls to show how light and fluffy they are. My mom made bread just like yours.....light. fluffy, and not dry and dense. Congratulations on a job well-done. I do have one recommendation. Next time you make a video, please make sure your volume is set higher when recording. I had my volume at maximum, but it could have been louder. I wish for you a wonderful life, much success and happiness.

Thanks a lot for sharing this recipe. I tried this today to make Vada Pavs and the Pavs came out really well, better than what we get in bakery! Instead of the pressure cooker, I baked them in the oven for the sake of convenience. Was totally blown away when I took them out and the taste was awesome. I baked at 230 deg Cel. for 17 minutes to get the perfect golden color.

I live in France, we are in lockdown because of the virus. My kids and I love bread and in France, we get amazing breads. But since our bread is over since two days, and I don't even have oven in this house. I thought I will search on KZbin how else can I make some bread. Today morning, I got up early and started making bread from your video. I have made pav in oven successfully so many times so making in cooker was something very new. And in two hours, I made this bread. I had to put it in my microwave oven on grill for 15 minutes because it didn't get brown on the top. The bread was so amazing, omg. So soft and just perfect. My kids are with Nutella, I with butter n jam with coffee and my husband just with plain butter. Some very relaxing pleasurable moment in these tensed times. Thank you 😊

reminded me of my childhood days.i used to live not very far away from a bakery and used to rush n buy ladi paav almost everyday it was baked n the doughs smell used to meet my nose n the long chimney sending signals..used to taste better than moms chapatis when hot ..dipped in mutton sauce or hot tea.paav bhaji is not complete without ladi paav..good I will bake it wherever i go.. will bring fond memories

Someone watching how he turns a wet shaggy dough into something you could work with would see it as magic. It's not magic. It is heat and friction and evaporation removing the extra water from the dough. All this does is promote adequate kneading of the dough. Kneading creates gluten; which is the structure of how dough holds in the air pockets from the gas made from the yeast. Pastry dough starts with a dry dough and works inward adding water. Breads start with a wet dough and works outward removing water thru heat, friction and evaporation. Pastry does not depend upon gluten while bread does. Likewise, if you make bread then use bread flour which has more protein. And if you make pastry then use pastry flour(half AP flour, half cake flour) which has less protein. The protein is what helps the gluten to form...

lwblack64 good explanation. I always wanted to know that. The chef is the only one on KZbin to show how he kneads to make the spongy bread. All the others just edit the kneading part and get to the proofing. I have noticed that rustic bread does not require such kneading.

Suman Banik. Hi, Before buying the yeast. check the expiry date of it. Once it happened, the bun that I prepared, it was not giving a good smell. Today I prepared buns . it came out so well.

+JasLoveBaking Hi Jas. The only difference between active and instant yeast is that instant yeast has smaller granules. When proofing in liquid they will both dissolve well.
