I made this meatless meatballs today and I want you to know that it is absolutely delicious !!! I only had grated parmesan cheese on hand but I may even omit it next time, it was very tasty even b4 adding the cheese to it. A definite keeper !!! Thank you for posting it!

I made these tonight. They turned out well. I think that I will sub provalone for the mozzarella next time and add some strongly flavored mushrooms. They benefit by dipping in tomato sauce. Yummy and easier than they look.

I just happened to see "Eggplant Meatball Recipe" in my KZbin travels...sounded good since I love eggplant...and now I'm laughing throughout this video at how this chef (and he is indeed a chef!) explains things to us. Clear, entertaining, and with a heavy but still understandable accent...for the most part. Lol. I feel like I'm sitting in his kitchen while he tells me what to do!! LOVE IT!
