I agree. I had a small herb garden, but they were never full and vibrant like the ones you have. I had mine in my kitchen window (sunsetting side of the house). Do yours stay where they are during your videos, or do they move somewhere sunny?

If you want to set up a garden, think what herbs you want and what this plant needs to thrive. Rosemary and lavender need little water and Lots of sun ( and space) while herbs like chives, parsely and basil need more water and a light but not too Sunny place. The biggest mistake you could make is packing too many seeds or plants in a limited space, so the plants will fight over water, light and nutritious minerals.

GREAT to have you back Frankie!! Please, never forget this. You promised you would do "Struggle Meals" at least until I die! I think this promise was made last season in a reply to a comment I posted. And, I'm holding you and your crew responsible for getting this done. I'm 63. And not well. Soooo could possibly not be as long as it sounds! (fyi~I'm not dying ☺) I'm ready for some healthy and easy ideas! After 50 years cooking the same old, same old (but with a few really good years thrown in), it makes cooking ~let's say~a bit less exciting. Your recipes are timely, nutritious, easy and delicious! Thanks for these. I've tried almost every recipe. And they're all good~and most are ~(kisses fingers)~bellissimo!! Thank you Jenn 💖 in Canada 🍁 ☺

Welcome back Frankie!!! I've missed the humour and the recipes, thank you and everyone else behind the scenes for this series. One thing I was a little disappointed about, however, was that this video has only one recipe which didn't use up the entire eggplant - I supposed one could use the rest of the eggplant to make more eggplant parmesan and eat it for the rest of the week or share it with others. I think this was also the case for some of the themed videos and their main ingredients. But I quite liked the earlier videos that taught me three different dishes using that one butternut squash so that I didn't leave anything to waste. But maybe that's just me. Anyways, thank you for these interesting videos, can't wait to see more!

I add some oil to the breadcrumbs before breading and bake them in the oven it's muuuuuch more crunchy and healthier because less oil over all :D

I love Frankie's British accent attempts, so funny. There's so many British accents and variations but the received pronounciation style is the one everyone does! I'd love him to do a British food episode with his struggle meal angle, on classics like fish and chips and mushy peas, a roast, maybe do a veggie one, Scotch eggs, etc. Having said that I'm British and mainly eat Italian and vegetarian! By the way Frankie Aubergine, Aubergine, Aubergine!!!!!! You can tell you really like that fried aubergine, it evokes childhood and happy comforting times. I like your approach to cooking, it's fun and unstuffy and you enjoy your food.

I love everything about his message! I've always been diligent about cooking at home (way yummier than take out!) and using what I have first, but even with years of experience I'm learning so much from Struggle Meals! Aubergine is just the French word for eggplant. Like Americans use the Italian term (zucchini) for courgette (French) and cilantro (Spanish) for coriander (French). Incidentally the English term for a courgette/zucchini is marrow.

I did it this way and the bottom piece of bread was soggy. Next time I'll just toast the bread and skip the broiler part. The cheese melts anyways if you just made the tomato sauce.

If you put a slice of lettuce on the bottom under the aubergine (eggplant for you Americans!) it won't go soggy.
