Let’s goooo! When I was younger, both my parents used to work and my neighbor used to babysit me. She is a WWII widow from Italy and she trained me on classic Italian dishes. This dish reminded me of her, Thanks so much Chef! #MoreOnyo

You know, Chef... I'm 57. AND a lover of all things - Eggplant! (Parmesan, Spaghettoni, Remoulade, Coulee, etc...), you name it. WHO KNEW! Well, I guess you did, Sir. My mind was blown. I just made a bunch of Ragu last weekend that I think would be PERFECT with this recipe. I'm pulling some out of the freezer tonight and making it this weekend. Beautiful piece of Italian creativity. Well done, Chef. And thanks for all you do for your "fwends"!

Mom made almost identical dish as a casserole. Sometimes with yellow crook neck squash. I'm in the nursing home and not allowed to cook. The *quack* they serve is not very palatable. When I watch your cooking I can smell/taste the flavors like mother did it. Thanks so much. 😊

Chef you have turned my life around. My love of cooking just exploded twelve fold. Not only are you masterful at your art but you present it with so much enthusiasm and “Joie de vivre”!!!! Working a a sous chef in Australia many years ago I used to make Sicilian spaghetti. Much like this with the fried eggplant lining a pie pan, then filled with spaghetti, sauce and parmesan, Then topped with more eggplant slices, baked, inverted then sliced into triangles. Delicious.

The amount of times I've said "I don't like XXX" and then Chef JP kicks in my door with a recipe that blows my expectations out of the water. I didn't really eat that much fish, now it's on our dinner menu every week. I was never much for breakfast but now I've got delicious frittata and eggs benedict to add to my repertoire. I saw the recipe this morning and said "I don't like eggplant" but I think Chef JP is about to convert me.

Lot of dishes people dislike is normally from a trauma from someone that did it wrong, or ugly... I'm saying this from anecdote, by the way... For example, i had a prejudice against oysters... Because once there was contamination on it and my family got sick, also, they look gooish, and the first time i ate it, it wasn't that "special", not sure that i'm the proper person to say, but it was "strange" at least... Now, i love oyster and mollusks...

Whenever I make eggplant parm, I don't layer it because I like it as a top or side with pasta, not a casserole. But this. Looks. Amazing. I want this every day of my life.

Chef, I find your "defects" visually appealing. Kind of like a garnish? Spooning the delicious marinara sauce around the bottom of the pie before serving would be beautiful. That's my inexperienced thought anyway, haha. It's a fabulous recipe. Thanks for sharing!

As an italian who *adores* parmigiana, i absolutely want to try this recipe! And for a tastier flavour, you can always add a layer of baked ham between the eggplant and the tomato sauce... I promise it will taste delicious!

Oh my it looked like a gorgeous flower as you were assembling it!🌼 Reminded me of getting a pizza years ago at Gina's Pizzeria where we couldn't get one with cheese due to an allergy, but the way they made it with the sauce and breaded eggplant, you didn't miss the cheese! If I ever make eggplant parmigiana again, I am definitely using this recipe Chef J.P.! Looks sensational! Thanks for all your teaching; it is essential in a time where generations are growing up without familial food traditions being passed down. You have added so much to so many lives in teaching us so much about food prep, cleanliness, and of course enjoyment! This is an excellent recipe. My family loves it, and so do guests who come over for dinner. I make the pie with two small variations. (1) I use a bolognese instead of a tomato sauce (or sometimes a combination if the bolognese on hand seems a bit dry). (2) I do not invert the pie before serving . I assemble the pie in a round table-ready dish and bake it and serve it that way. I like the way the narrow parts of the vertically sliced eggplant come together at the top, where I place a single round slice, like the button on a winter cap.

Ummm.ummmmm. I love your job too! We always ordered Eggplant Parmesan back in the 70's because we love it. It was one of the cheaper dishes on the menu too. Now everyone loves it and the price has gone up. This looks "amazing!"

I like the little "defect" because of the color and decorative contrast. A dash of red leaking out the low corners could be desirable. Happy new year ! Thanks for your happy enthusiasm. 95% of chefs or youtubers who make cooking videos have defects they just hide it. You can see it almost every video that the food goes into the oven and the food goes out are not the same. But Chef JP shows us his mistales honestly :) last week he forgot to take out poached eggs while telling us the secrets of Hollandaise. God bless you chef!

The water trick is simple wet your hand,flick at the pan.This avoids an explosion since it is a tiny drop and allows you to stand back.My dad taught me that.Only if you don't have batter to test it.Great twist on my favorite Italian dish.Fruit pies are always best with a little ooze coming out.I would guess the same is true for this.

Thank you Sophia, It is people like you that make it all worthwhile! I was blessed at birth with an amazing Mom. Not only was she a Cordon Bleu Chef but she instilled in us to find what we love to do for fun and see if we could make a career out of it. As a very young age my favorite thing to do always was to be in the kitchen with my Mom. So 64 year later I am still having a blast and being able to share it with millions of people all over the words is really really nice. 😀

I love this, I put egg plant in my lasagne in between my layers, I also batter them with flower, fry them.

OMG I have done this long time ago with all my thought, I never knew this dish truly exists! It also can be fried as small pieces or steamed. Love this channel!
