the way we do back in Iran,sprinkle salt on eggplant and let sit for half an hour or so,that way salt get juice out of eggplant ,and that way you get the bitterness out,and it soak lot less oil also you can substitute dried lime instead of unripe grape which a little harder to come by in us and Canada but still great video ,thanks for sharing

Yes but the American eggplant is not bitter like the Iranian eggplant so no need for the salt treatment. But if the eggplants are bitter, the salt treatment take it off as long the dark liquid is thrown out.

I made this yesterday but it came out a bit too watery. How much water should we add so that it becomes thicker?
Music was great. It's wonderful that you are teaching thousands of people how to cook a dish they may not know how. I have never seen potatoes in khorosht bademjoon or filet mignon, its usually made with braised beef from my experience. Also the cook seemed not confident and timid while cooking and using the knife, etc. Did not move with confidence, can tell shes a newbie. I guess we all start somewhere. But thanks for your series! You should film a maman bozorg and see her confidence!
