Eggplant tastes better than meat. Surprised my guests!
Watch this video to the end to learn how to make a delicious eggplant dinner.
Peel 2 eggplants, do not cut all the way through.
Cut each eggplant in two.
Blanch the eggplants in hot salted water after cooking them for 1 minute.
Allow to cool at room temperature.
Mix 3 eggs, Greek yogurt or 1 tablespoon mayonnaise,
Salt, black pepper to taste.
Mix together the breadcrumbs, flour and ground smoked paprika.
Bread the eggplant.
Dip into egg mixture.
Fry in heated vegetable oil on 2 sides over medium heat.
At the end of cooking, close the lid for 5 minutes.
Place the eggplants on a paper towel.
