I just came back from Thailand and let me tell you, their Roti Pancakes are divine! I had them almost every single day and I don't even like sweet food. I’m a Thai and Roti is my favorite desert. It is crispy on the outside, softer inside, smells and taste buttery-sweet from egg, butter, and condense milk. The green color is either due to food coloring or pandan extract. I love the smell of pandan.

I was there in October. I had watched several youtubers I follow who would grab some of these whenever they saw someone selling them. When I was there, I found someone selling them and knew I wanted to try them. It was so good, I went looking for them again only a couple hours later but they had already moved to a different location. Then the next day, my last day before returning home, I found them again and of course had to get it! So so good!

that is a lady that knows a thing or 2 about a hard days work. That's what I like about people working out there in the streets, self owned and run businesses, they know about real work. None of this chatting with friends, free food and drinks, works in office when they feel like it. This is real work. Props to her for making a life for herself. Just so tht everyone knows, the egg banana that she is making is a derivative of a local cuisine of kolkata, India called moghlai paratha and the roti that she was making in the end is India's favourite Lachha paratha. She did add her own twist to it by adding banana and condensed milk and other toppings, but the basic thing is the same. Also, the food that's available in India is savory she converted it into a dessert with her own creativity, so kudos to her for that.

When I was a kid, roti in Thai was usually made by an Indian, Burmese, and Bangladeshis. But these later decades I see more and more Thai people making it too. And the style also has changed. 20-30 years ago. The menu would be just two. One is plain roti with condensed milk and sugar. Another is with egg filling. Both made the same way as spread the roti thin onto the pan. The way to twist the roti and to smack it at the end is something I just see lately. Oh, I forget. Another rare menu is roti mataba. Savory roti filled with chicken or meat and serve with ajad (cucumber, red onion, and chilis in sweet and sour clear sauce made with vinegar, the sugar, salt and water)

The definition of "clean" is relative and depends on what you are comparing with, but it is not clean at all to me. She is not wearing gloves, which mean to say that she is handling money (full of germs) and food with the same hands. The stall is beside the road, so there is loads of soot and dirt around that will be mixed into the food.
