Japanese guy here, I recommend using round rice instead of long rice, wash it till no more white water comes out and then cover it with water (the best way to know how much water to add is by dipping your index and middle finger till it reaches the first finger phalanx counting from the tip of your finger) then put it on a stove till it boils at max temp and when it hard boils lower the temperature to a minimum-medium (level 3 in a 9 level stove for example) and always cover it with your pot's top. Then boil it for 15 mins an turn the stove off and let it sit for 10 minutes, without ever stirring the rice and voila, you got some nice rice. Also add in the water a pinch or 2 of salt. Edit: It was a nice meal nonetheless!

This was a great breakdown of that recipe! Ive been wanting to try this since I first saw the episode, I'd recommend salt curing the shiso leaves ( wash\ dry them and layer them in kosher salt) and then batter frying them. They are by far my favorite thing to fry as a tasty slightly salty snack or side for dishes.

I am so into eggs with the runny yolk. I keep a small special pan in my kitchen dedicated to cooking them so they effortlessly slide out onto some toast, rice, or leftover baked potato. The runny yolk is so under rated. For instance I hated them as a child because I had no developed palate with which to enjoy them. But now they sing! Glad to see you take the bold step of making it a lifestyle channel and not just a science channel. Those non-science things that seem _pointless_ really do help us in our work. Takes a wise person to realize that.
