This special recipe comes from the “Zu den Drei Mohren” inn in Augsburg, a place with a rich history. The inn, whose roots go back to the 14th century, was a meeting place for artists, politicians and nobles from all over Europe for centuries. It was considered a symbol of hospitality and exquisite cuisine. In this video, I bring a piece of that history back to life by baking a cake that once delighted guests of this renowned inn. 📋 INGREDIENTS:
Dough:
375 g butter (13.2 ounces)
200 g sugar (1 cup)
5 egg yolks
1 tsp cinnamon
450 g all-purpose flour (3.6 cups)
100 g ground almonds (0.9 cups)
Filling:
12 egg whites
680 g powdered sugar (5.4 cups)
1360 g grapes (3 pounds)
Bake:
Preheat and Bake: Preheat your oven to 180°C (356°F). Bake the cake for 30 minutes using top and bottom heat.
Reduce temperature: Then reduce the temperature to 100 °C (212 °F) and bake the cake for another 50 minutes, this time using only the top heat.
Increase the temperature: Finally, increase the temperature again to 200 °C (392 °F) and bake the cake for 10 minutes, again using only the top heat
Baking pan diameter: 29 cm x 39 cm (11.42 inches x 15.35 inches)
