I did this exact same thing, except I had an easier time beating her because I had 65 Int and 60 Faith which made the Sorcery Scaling of the Prince of Death's Staff a lot higher.

Just use a different stuff with S scaling in intelligence only, the bonus to death spells of the prince staff is not worth the points in faith

It could possibly be because without the rune arc your stats might be too low for mimic to cast the spell
