ELEA DEVEX Pulsed Electric Field Industrial freeze-drying trials

In 2019 Elea brought their PEF Pilot system to Devex to trial Pulsed Electric Field assisted freeze-drying on strawberries. The trial helped to prove the viability of PEF enhanced freeze-drying at an industrial scale. PEF induces electroporation which opens cell membranes, enhancing production, improving quality, producing better taste, colour and aroma and shape stability. This is slightly misleading, the one that has had PEF appears to be freeze dried while the other without PEF seems to have been dehydrated. So you aren’t comparing strawberries to strawberries if you know what I mean.
