I have tried many white bread recipies in my bread maker. This is the best one by a long shot and is now my go to for plain white bread, Only difference is, i can get fresh yeast in my local supermarket so I use that instead at a x3 ratio. I premix it into the luke warm milk with the sugar and wait for 1st bubbles before adding the flour. I live in Spain and my machine is a silvercrest 850 sbb.

Hi Ellen, I finally managed to bake a loaf of bread that didn’t sink in the middle. I followed your advice . I used the dough circle and left it to rise in a warm oven. It worked perfectly. I also baked the bread in the oven. My granddaughters said, Nana you finally got it right 😅, I was chuffed 🎉. Thank you Ellen, I will be trying out more of your brilliant recipes now !. Thank you for such a lovely comment, Clive! I taught at the elementary school level grade Kindergarten for the first 17 years, then up to 2nd, 3rd, and 4th. Kindergarten is the first year, age 5. Then the others are ages 7, 8, and 9. I know your education system has different levels, years, etc. I have a huge branch of my family in England. As far as ingredients go, I believe our bread flour is your strong flour. I’m not sure about the yeast, but the rest should be the same.

I have been so careful about getting around people and have ALWAYS worn my mask, but I guess if covid wants ya its gonna find a way. I am 69 and been vaxxed and boosted but doc says the good thing is i am at home, not in a hospital and using a vent.

This really is a delicious white bread; have made it many times and it always comes out soft and fluffy and delicious. My daughter is vegan so she veganized your recipe, only changes she made is Oat milk for the half & half, and any vegan butter for the dairy butter. I will have to say it's just as fluffy and delicious as your dairy version.

This recipe is way better than the basic one that comes with the bread machine. I have the same brand bread machine as you have. I cooked this recipe in my bread machine and while it was great, I did notice that the sides were much browner than the top. Thanks for your videos. You have been a great help to a newbie.

This recipe is a winmer. This bread rose so high, even in my Emile Henri bread pan. The foil tent over the top of the bread at 30 min is a winner. Ì have a Thermo Pop probe with a tiny diameter probe. I took the bread out of the oven at a probe temperature of 198F. Pillow soft and fluffy . I have 'tasted' 3 slices! My Zo now is known as Zelda. You are the best.

Hi Debbie! The water should be just slightly warm at about 120 degrees for instant yeast, which you can get on Amazon. a.co/d/7MI136Y I highly recommend you using only instant yeast in the bread machine for foolproof results. For active dry, liquid should be between 105 and 115. What kind of bread machine do you have? If it has a rest or preheat you can use all ingredients cold from fridge/faucet. If you are making my white bread recipe and baking it in the machine , use the reduced version written in the recipe as instructed. The only setting my machine has is White for white bread. I don’t have soft, sweet, or milky settings. You’d use the most basic setting. I hope this helps! EllensBreadMachineRecipes.com

That depends on your bread machine. My bread machine has a rest at the beginning that pre warms ingredients so I can just use them straight out of the refrigerator. If your bread machine doesn’t have that feature (it starts kneading as soon as you press start) then you do have to warm your liquid, soften butter, and have eggs and other cold ingredients sitting out at room temp. Did I forget to mention that in this video. I’m pretty sure I say that in every video.

Ellen, how large a loaf is this? I can usually tell by how many cups of flour but not by weight. I'm limited to 3 cups of flour max, 1.5 lb. loaves. Thanks!

It’s a two pound loaf. 540g is 4 cups of King Arthur Bread Flour. You can Google “Bakers Percentages” to learn how to reduce it. Good luck!

I made a loaf of oatmeal bread yesterday. All of the recipe was followed perfectly. When I checked to see if a gold ball had been performed, it looked like soup. It took 5 tablespoons of flour to make a perfect ball. We were having rain at the time. Apparently the humidity was so high and I had to add so much flour. The finished loaf was perfect. Am I on the right track? I could not believe it required that much extra flour. I am hoping to be brave enough to use the dough setting and then bake the bread in my kitchen oven. I would like to send you my recipe but I don’t know how to do that.

Yes, that can happen(the humidity )but it could also be how you measured. Are you using measuring cups or weighing? If you’re using measuring cups you may not be measuring accurately. Our bread turned out delicious. I have a Hamilton Beach and used the basic cycle and let it cook the whole time in the machine. The only problem I came across was that our loaf collapsed. I added the correct weight of yeast, just not the same brand. I used Fleischmann's bread machine instant yeast. Was that my problem?

I don’t think the yeast was the problem. Here are some questions: 1. Did you check the dough five minutes into the kneading process to make sure it wasn’t too wet or too dry? 2. Did you remove the loaf from the machine and bread pan fairly immediately after it finished baking and cool it on a rack for at least 2-3 hours before slicing? 3. Is it humid where you live?

@@BreadMachineVideosWithEllenH I checked initially and it was tacky like yours. It wasn't humid and it was already collapsed while still in the bread machine finishing up baking. I never lifted the lid to check on it except for the initial mixing process.

Have been making this bread in my Cuisinart (RV machine). Have Zojirushi V+ at home. Using the smaller recipe, all by weight. Still comes out rather dense and tight crumb. Not really light and fluffy. Anything I might try to get it a bit more light and fluffy?

Yes. I have two kinds. 1, Williams Sonoma Gold Touch 1.5 pound pan and USA PAN. Both are 10x5x3. I must be crazy. I thought I showed that in the video! Both are nonstick. I still spray with canola oil and line with parchment so I can just lift it out onto the cooling rack. I know I show that in the video.

could I sub the whole milk with powdered milk?

You could use water and some powdered milk. I don’t know how much though. I never use it because it’s nonfat. The more fat the better.

Why my recipes are in grams I grew up using measuring cups, and spoons like most other people in the United States. I didn’t know anything different for many many years. After I had baked bread for a year or so, and was still using measuring cups and spoons, I noticed in my Facebook Bread Machine groups that most people were making bread using gram weights instead of measuring cups. I didn’t really understand what the benefits were at first, then I bought a scale and started using it and soon I came to understand why people weigh ingredients instead of measuring them. Here are the benefits of weighing your ingredients: 1. Weighing is the most accurate form of measurement. 2. Weighing gives you more consistent successful results. 3. Weighing takes much less time and makes fewer dirty dishes. 4. Most of the rest of the world uses grams. I write my recipes in grams because I have “bread friends “ from all over the world who want to make my recipes. 5. I’m lazy! Weighing is so much easier! I’m sorry but I cannot convert my recipes to cups. You are welcome to try using Google. If you try weighing, I know that you will like it better than measuring with cups. Absolutely everyone I have taught how to do it has told me within a couple weeks, they are so glad I convinced them to try it! They tell me they would never go back to measuring with measuring cups! I feel the same way! Now having to use measuring cups occasionally for a cookie or cake makes me groan! I’ve become so lazy because weighing is so much easier! I’m methodically converting all my old family recipes to grams. Please give it a try. For under $20, you can get the scale I have!
