I made tofu the other day and can't thank you enough for the inspiration and recipe! Your instructions are perfect and mine looked exactly like yours throughout the process. Your description of what a soybean should look like when fully soaked was invaluable as I was a bit stumped before thinking of going back to the video. And the tofu tastes delicious. I sometimes to make cheese and there are so many similarities but tofu is SO much easier! I'll definitely be making it regularly. Thank you, Elly.

Thanks Arlo, that's wonderful to hear! So fantastic to hear your feedback. Everything becomes easy when you know what to look for and why certain things are important. The soaking trick has been such a game changer for me, I get such a good yield now!! I'll finally be sharing my okara bread recipe later today or early next week - I hope you find that useful too!

I do plan to make the okara bread, thanks for the video. With my latest batch of tofu, I saved the whey and used that as my liquid for my usual whole grain loaf. I have more whey in the fridge that I'll use for the okara loaf. Getting my money out of those soybeans!!@@ellyswholegrainsourdough

Haha, you sure are! I used the aquafaba from cooking chickpeas in a loaf this week - it worked out great!

This is amazing Elly!!! I’m so inspired. I cannot believe you made your own Tofu! You are so clever. I must admit I found the ‘cut’ of your tofu block as satisfying as the ‘cut’ of your soaps!! 😂 I am going to get the ingredients and try this. Thank you Elly. I think it was diffrent to make it but the technique is the same as making ricotta. I am sure it's much better than tofu from store. I will try to cook it like ground meat for my tacos. Great video. Allways yourself, Elly I know from years. Francoise.

Wow Elly, this is wonderful. I didn’t know tofu making was so easy! You mentioned that you enjoy adding it to noodle soup. Do you have any ideas or recipes for seasoning the tofu for enhancing the flavour? Store bought tofu is so bland where I buy it from in Canada so I don’t eat it as much as I’d like to.

Yeah, it's pretty bland. I just put it into my noodle soup plain, but it soaks up all the nice flavours from the soup broth. There are lots of nice marinade ideas out there if you want to fry it. I tend to keep it simple, just use my favourite sauces/ginger/garlic/honey, that kind of thing.

Thank you for your video. I want to make soy milk and tofu at home. Have you tried using the froth that is formed when you cook the raw soy milk in a cake? Maybe that froth can be used for baking instead of using whisked egg whites.

Nice tip straining the milk with a polyester voile cloth. But what polyester voile cloth did you use exactly?

How do you wash and clean the cheesecloth completely without attracting insects to your home? If you throw them into the washing machine, it will clog and insects will be drawn to eat them.

It's easy to clean. Just rinse any solids off (easy to do - they don't stick to my cloth), then wash in machine.

Followed directions however after sautéing the tofu the outside was firm but the inside was soft and airy even having pockets of air. I prefer firm. We used high quality non gmo soybeans and quality calcium sulfate. We tried two batches even pressing the tofu longer the second time. Any suggestions to get a firmer less airy tofu? Thanks

Try a heavier weight and much longer pressing. That works for me to make it really firm. You can also tap down the mould as you're spooning the curds in. That will reduce air pockets. Good luck!

Is the tap water in Brisbane chlorinated? Here in Calgary it is so I would be more prone to allowing the water to stand for a few hours prior to using it as opposed to directly out of the tap. I do this especially when I'm adding fresh water to my sourdough starter. Chlorine isn't very hospitable to the wild yeast culture.

Gidday Vern! Yes, our tap water is chlorinated, but we have a filter under the sink. Having said that, I know heaps of folk who use chlorinated tap water for their cooking and sourdough starters without any issues (including me in the past). You'd be surprised how tough your wild yeast culture actually is :)

Hi Ellie, hope all is well with you .Thank you for all the lovely videos I really appreciate it and I enjoyed them all, can I use rennet instead of the calcium sulphur like they use for making the cheese and also can I use cheesecloth instead of a cloth?
