I made this on Friday while on breaks working from home. It was really quick and easy and didn’t leave me with a load of dishes. I did find it way too sweet, but I used a little left over cream and made a little cocoa syrup that wasn’t sweet and together it went very nicely. I used about 2-3 tablespoons of heavy cream, a few drops of vanilla, a pinch of salt, 5 tablespoons of cocoa powder from the back of the cabinet and 1 tablespoon of powdered sugar for a little more body, then added water til it was the consistency I wanted after heating and straining.

Great video. Glad to see you acknowledge the chemistry that goes in to this. Mom's for generations are Scientists, just I said years ago. 1 thing I do is chill a stainless steel bowl and the mixer paddles in the freezer for a bit before ever whipping cream, it helps solidify the cream thoroughly as there is not your warm environment working against you. Any kinetic energy, such as the mixer paddles rotating, creates heat which is counter productive. Instead of salt which conflicts with the cream, try cornstarch it will not add flavour and thin out the sugar influence. Thus you will taste more of the natural creamy flavours.

Just read a lot and be willing to experiment and fail a lot. And of course you need some kind of goal. Most of the time it starts with a lack of equipement (no ice cream machine) or something you're aiming for (texture, taste, crunch, smell etc.). The fact that more sugar makes sorbets softer is something that's well known when you start reading about the science behind ice cream making. So once you understand principles like that you can start using those principle to achieve what you want. Harvard has a great series of lectures about the science behind cooking.

I made both the chocolate and vanilla. We were having trouble with our freezer, so at first I thought the texture was a bit too much like whipped cream. We got the freezer fixed and went on vacation for twelve days. When we came back, the texture was perfect! And the ice cream is very rich. Someone else commented that the chocolate was slightly better than the vanilla and I would agree, but the vanilla is also quite good. I am thinking about swirling flavors, such as blueberry, into future mixes of the vanilla for variety. Thank you for the recipe! Another person commented that they had good luck using soy milk and soft tofu. I wish they had left directions! I want to try that, as well.

I tried making this recipe and OMG it turned out so soft!!!! even my little brothers loved them
@laurabennet76934 жыл бұрын
You are fun to watch and I appreciate the science you shared. This did turn out to be soft and scoopable as promised. Unfortunately, it's way too sweet for us (and my husband has a big sweet tooth). We didn't love the texture either. It tastes very much like overly sweet whipped cream with a touch of saltiness I'm so sorry. Thought it might be helpful for others to know of our experience. I was really excited to try this.

I wonder if it would help to keep adjusting the amount of sugar and so forth to get the consistency and taste you like, might be worth a try 😊
@gazzaboo84614 жыл бұрын
I feared as much, it's almost the same recipe as normal whipped cream cake frosting, but without the salt and not frozen. I'm not sure how it could taste like Ice cream from the description. I do like whipped cream frosting, though I tend to use less sugar than normal or it's too sweet for me, so I doubt this would be my thing. I'm glad others like it though.

was so excited to try this because in the bahamas during the lock down it is almost impossible to find ice cream but no matter how much i blend it is still watery but thanks for the post

I tried the ice cream recipe and it came out perfectly so so 😋 I actually had to leave it in the refrigerator longer though because it wasn't cold enough to whip but after it was cold enough it whipped right up and it was so perfect!!A bit sweet for me but not sweet enough to make me not eat it...I ate almost all of it by myself!!!😂

This is great recipe . I’ve tried and it’s perfect creamy, soft !! Except that it’s so sweet but it has its own advantage you’ll get to eat only in smaller quantities as it’s sweeter than normal . But I didn’t expect that texture 🤤🤤

Diss Ah well to be honest it is sweeter then regular soft served ice cream I knew so far. But it's awesome and has this extra vanilla flavor I love so much and the texture is awesome. Don't get me wrong I LOVE SWEETS but my husband has diabetes so it's definitely not for him... lol But the chocolate one is a bit less sweet so it's a good mix

she is actually making sherbert, sorbet syrup with the addition of dairy, very clever!
@mostafa505004 жыл бұрын
Nick Wiliamson would that be unbearably sweet ? It seems like a lot of sugar there
@TravelBug1894 жыл бұрын
This is far from sherbet. Sherbet includes fruit. Sorbet is just fruit and sherbet is fruit with dairy. And no fruit here boy 😂
