I have watched this so many times because I love love looooove lemons! Twice a year, my husband strips the tree and I have the joyous job of zesting laundry baskets full of lemons…I stay up all night enjoying the delicious, wonderful aroma of lemons. (I pack it in small containers, the larger ones with sugar, the smaller, with salt, and freeze them, for use throughout the year for cakes, desserts and the salty ones, dressings or other savoury dishes that need lemon) The next day I juice them. Usually I freeze it in icecube trays and disposable IceCube bags because I don’t have enough trays. Last year I didn’t have enough freezer room so I made lemon cordial. This year I boiled the juice to reduce it a little and filled sterilised jars….they all sealed, I am excited to see whether it retains its vibrant freshness, unlike the horrid bottles of lemon juice that you can buy. Emmi, I just love watching you

After working with citrus fruits, wash your hands thoroughly with soap and cold water (heat and moisture can make the reaction worse), then minimize Sun exposure on the affected area for the next two days. If you have to go out, apply sunscreen. And it _sounds_ worse than it generally _is._ It's typically no worse than a bad sunburn... because now that I think about it, it basically _is_ just a bad sunburn, just one that set in quicker than usual due to the chemicals in citrus fruits. Redness, burning, itching, peeling, blisters. Chances are, you'll be fine.

I literally get buckets of lemons, take a potato peeler to them and take off the zest, run them through the juicer, bottle of juice and macerate the peels in several baggies at a time. I have made this so many times! It's the best!

I made the lemonade numerous times as it is amazing drink. I used the same techniques making a citrus sweet tea. Iremember I had that gadget cooking hotdogs in the 1980s in Hong Kong. We made hot dogs as a snack, and put various toppings like cheese, 1000 island dressing, mustard, ketchup, sauerkraut. Such good memories with family.

Today I had started a very similar recipe, and pulled up your channel while waiting for the zest to steep with the sugar. Lol. I was really surprised. I learned this from my aunt when I was about 10. I used 7 lemons and just over a cup of sugar. After steeping the zest for 4 hours, I added only 2 cups boiling water and dissolved the sugar. I add ice to that to chill it and keep the colour bright yellow. Then strain and add the remaining water and the juice of the lemons so the pitcher is full. I think my extra lemon and a little less sugar makes it more sour, which I personally love! It’s like drinking a lemon drop hard candy.
