@ChrisJohnsonCJs-Kitchen3 жыл бұрын
I've been adding cheese to my Ramen ever since I saw a video of Simon & Martina's where M raved about it. I don't use the plastic wrapped singles, but the deluxe American. It melts great & tastes better.
@IQzminus23 жыл бұрын
Yes, I’m so glad I decided to give American cheese in ramen a try after reading recipes from South Korean. A few years later, I also learned from another South Korean ramen recipe that adding a little less water and instead quite a bit of milk in the end (but while it is still boiling, when less than half the time is left) tastes similar to adding American cheese. Like surprisingly similar, especially in how it affects the flavour of the soup base, but a little milder and rounder of a taste. But definitely in the same family of flavours. So I switch between the two depending on what I’m in the mood for. I recommend giving it a try to anyone that enjoys a little American cheese in their ramen.

I was inspired to give this a try, but after making the first serving (for my husband), I realized I needed to adjust a couple of things for the other two servings. We only had Maruchan brand ramen, which might be why I had to finesse it a bit. 1) I reduced the amount of boiling water to around 1 cup (236 ml). This allowed for a rich, creamy sauce rather than the thinner, broth-like version my husband received. He still liked it, but ours was better. 2) His noodles were a bit too soggy, but since the egg needs that full, two minutes in the microwave in order for the egg whites to cook, I couldn't shave any time off of there. So as soon as it came out of the microwave, I immediately broke the yolk, & stirred in the cheese slices (they had softened a bit after sitting out, which helped). This created that thicker sauce I mentioned, which coated the noodles beautifully (but still with some left in the bottom of the bowl) rather than having them absorb more liquid. 3) Optional, but we added black pepper & some leftover cabbage, as well. It wasn't bad, but broccoli would've been much better, imo. It did add a nice bit of bite, tho.

I know a little hack which was created by Nissin in Brazil when they released a "yakisoba" line back in late 80's, early 90's: you cook the pasta por 2 minutes, then put the dried pasta into a saucepan with two tablespoons of oil and cook the pasta for some 30 seconds, then put the seasoning. The seasoning is still on sale in Brazil to this day, it's used with the "Talharim" line, it's a heavier seasoning.
@Avi2Nyan3 жыл бұрын
Yeah we have that in the Netherlands as well or at least something similar: Nissin Soba. There's actually no soba involved - they just sell instant ramen under that name - but I love how it's a 'dry' version with a sauce that is kinda glaze-y. We have them in 'classic', teriyaki, chili and yakitori. Especially delicious if you add some chopped green onion

My go to is cooking the Ramen in the broth on the stove (maybe adding some frozen veggies to add color and flavor to the broth, and sometimes I'll just use a small piece from a bullion cube), adding in butter, beating one egg per brick (I usually do two), and after the Ramen is cooked, lifting the noodles and pouring in the egg over them to coat them without instantly cooking them, adding it to a bowl lined with American cheese and topping it with Sriracha. I thought Carbonara was Bacon, Alfredo and chicken? We add that to penne along with peas... and it's was always called Chicken Carbonara where I'm from... now I'm questioning all my food names... lol

I melted cheddar while boiling my instant noodles and bringing it to a simmer and then mixed scrambled eggs in my broth (same amount as yours in the video) and it's just as creamy! So long as the broth is not too much, i guess. I also topped it with tonkatsu and added a little bit of chili flakes and powder. It's so stinking good also!!

I had to try making this, I was very curious about the American cheese idea in noodles. I used egg noodles instead of instant ramen because I never buy that anymore, with a little veg stock, garlic powder, MSG, black pepper and chilli flakes as my seasoning, along with some dried aromatic herbs (mix of onions, chives, red pepper, parsley, garlic) which you can find commonly in supermarkets here. I also put a little oyster sauce and a splash of soya sauce in the mix for extra flavour and let the noodles cook in this. I chopped up some bockwurst and added that too. Added the egg when the noodles were cooked and just let it cook the egg on very low heat for a bit with the lid closed. Sprinkled some cayenne on top for extra heat and some spring onions. I overdid the egg a bit because I got distracted so it wasn't soft and runny, but it turned out so good!

Microwaving an egg can be super dangerous. Some people have gotten serious burns from it exploding . How to cook that, a baking channel on youtube just did a debunking video where she showed what can happen. Just be careful :)
@itsneryssa3 жыл бұрын
This is why you poke a hole on the egg yolk before microwaving it! What makes the yolk explode is the membrane accumulating too much steam, and poking that hole prevents that from happening :) Been poking holes on my eggs for a while now when I microwave them and have yet to see an exploding egg.
@prettykitty3453 жыл бұрын
@@itsneryssa it does help but in the video she tried a lot of different ways and sometimes it still explodes im not saying it happens every time but it can just wanting to let some people know

@@itsneryssa i really recommend the video from how to cook that its super informative. She also has a degree in food science so she really tests things out. Like she showed even the white by itself can expload its not just the yolk.
@tookitogo3 жыл бұрын
@@prettykitty345 I saw that video too. I love her channel! The only thing she didn’t test, IIRC, was microwaving beaten eggs. For years now I’ve been making maangchi’s microwave gyeranjjim (“steamed egg”), no ‘splodey.

I don't know if having less than fresh eggs (more than one month post production) is a blessing in my case because I still have to have an egg at that date to bust while I'm poaching it or just cooking it with a slice of cheese as topping in the microwave. I always poke the yolk though at the expense of a bleeding egg.😔

I always made my instant ramen the same way without the mushroom/sausage, but I would also put some butter in the sauce. Same effect as the cheese, making the broth really rich and flavourful. Insane how much it totally remakes the flavour profile.

I 💜 noodles. Ramen noodles are still fairly new to me, I grew up with more of the Italian pastas, and egg noodles, the instant noodle to me was the Lipton Cup Soup. I was already high school aged the first time I really noticed them. Just appreciate seeing ways that other types of noodles are used.
