"Rinse them with water to remove the extra starch." "Now, put them in a bowl and stir in some extra starch." I'm sure there's some kind of reason for this, some difference between potato and corn starches, but I found it slightly perplexing, as well as humorous.
@teridoster5840
@teridoster5840 3 жыл бұрын
Cornstarch and potato starch have very different properties. The starches inside the potatoes don't help crisp. They convert to sugar and promote browning. If you leave the starch on them, they will turn very dark brown before they crisp up. They also have a tendency to turn an unappetizing grey color on all the cut edges, which would be hugely noticeable inside something like hash browns with all the little potato bits having hundreds of cut edges. Also, not rinsing the potato starch off can leave you with a gummy interior, whereas cornstarch absorbs some of the moisture and holds them together without causing the gummy texture 😉
@SkiesTurnedGrey

If ya want to simulate the beef tallow you can infuse your cooking oil with some beef bouillon and if ya want more potato flavour or just dont have corn starch for whatevs reason... You can use the reserved starch from the potato water (it will settle to the bottom in a short while, faster if in the fridge; shud be done by finishin cookin and shaping tatoes honestly). It also just feels cool to make the recipe with even less ingredients that way heh. Just potatoes and oil is all you need rly.

A couple of tips for these - If you're using a skillet rather than a deep fryer, just make sure you have enough oil for the patties to float a bit. If they rest on the pan, they scorch very quickly. These also freeze very well if you wrap each one in plastic wrap to keep them from forming crystals, then store them in whatever container is practical for your freezer. Just don't fry them and then freeze; you only get mush lol. Form, freeze, then fry.

Chances are the in restaurant versions are more complicated then this. I wudnt be shocked if mcdonalds is using a very specific kind of potato with the exact starch ratio they need and sourcing that potato is likely hard except for when one is mcdonalds. That and they most definitely add more seasonings than just salt to their potatoes. Likely the person is only used to cooking it on a huge grill surface in large batches and just thinks it wud take way too long to make that. I imagine this specific task is a daily task that takes a worker or two about an hrs worth of work to prep for hash browns needed for just their far too short brkfast window. So to many folks that wud just seem like way too much complication considering the oreida ones will taste almost as good, and as good if ya top them with msg and cheese

If the frying is a major issue for yall, and i get that and wudnt judge for it, then there's always air fryers and they can cook these up just as tasty... I wud just then recommend A: adding some more oil (or even butter) for the initial cooking and shaping, this is just for flavour rly as the air fryer wont have the oil infused flavour otherwise. 2: Going the cheese stuffd route or even adding other stuffing ideas (like jalapeños as another person suggestd) and more seasonings than just salt. This will make a different kind of hash brown but i betcha it tastes as good. Its rly prty much baking them, but it does it at more frying pan heat levels than your oven will ever hit. Tho you cud also stick the hash browns under your oven's grill (what American's wud call a broiler) and watch them closely and flip when they get colour. This will give you more of a roasted hash brown flavour but can cook up rly fast like a frying pan wud and avoids the scaryness of working with hot dripping oil 🔥 Or just bake them and get subpar hash browns.

Emmy please read this! You need to try the Japanese method of composting called Bokashi. Bokashi is a Japanese word meaning "fermented organic matter." Developed in the early 1980s by Dr. Teuro Higa, a professor at the University of Ryukyus, Okinawa, Japan, the method involves layering kitchen scraps (vegetables and fruits, as well as meat and dairy scraps) with a Bokashi inoculant in a special bucket. This means that you can compost leftover foods from dinner as well. This technique is faster, easier, and you dont have to worry about what you can compost and what you cannot...

So as soon as I got my butt settled I turned it on but I had to comment first because I’m just so stinking excited! I have never wanted one of your experiments to go so well before! I don’t know why I’m so jazzed about this I don’t even really eat them but 2-3 times a year?!? However if I could make them at home I think they would be a major hit! You are so fun, you are the best and you are pure sunshine during some very dark days! Also a grt idea... Get a mcdouble and a mchicken and put the mchicken in the mcdouble. It's like $3 and far tastier than a big mac. Probs even better with a hash brown or two. (in as in between the two burger patties if ya can pull them apart)

We do lots of composting in our house too! We grow vegetables in the garden, so it's a win-win situation. Free compost and less guilt about food waste. We have a hot bin so it takes hardly any time for scraps to break down - I'd definitely recommend them

Compost love. I'm happy to say I had familiarity with compost growing up. The very simple version back then for backyard plots of veggies and fruits. Now Composting doesn't smell nearly as much, which combined with the resurgence in interest in sustainability, has made it accessible, popular, and to some degree in vogue. Can't wait for my town to eventually get an industrial composter, but there's something so nostalgic to me about the stinky bucket of food scraps.

Hash browns and breakfast potatoes are my absolute favorite breakfast food. My mom was 1 of 6 kids and they didn’t have much growing up. So my grandmother regularly made hash browns and fried potatoes and onions. When we were kids my cousins and I loved when she would make them! Fried potatoes and onions is amazing. Sometimes we would eat them in a sandwich with butter (so many carbs lol) but it’s amazing. Lol
