ENFRIJOLADAS - ENCHILADAS WITH BEAN SAUCE

Those look good, thanks for sharing the recipe. I have some of the dried Guajillo chilies and pinto beans plus tortillas so I might make a batch this week. I’m thinking that bean sauce would be good on a crispy tostada topped with lettuce, tomato, avocado and some shredded cheese.

When down to the last little bit of beans in a pot, I boil the liquid and mash the beans until it makes a thick sauce for tortillas. Easy peasy. We usually have tortillas in the fridge which makes good use of those little bits of whatever leftovers.

So pretty! Coincidentally I’m making salsa verde today for chicken/cheese enchiladas. I also have a small countertop oven I purchased when my regular oven bit the dust during Xmas 2022. Love it - perfect for just the two of us . I think it saves energy since it cooks much faster than the big oven.

They sometimes have a husk on them at stores so might have passed them by. Just roast with a green pepper and some jalapeno like she did and blend it for a great sauce.
