I love Koshary! When I traveled to Cairo I stumbled upon a crowd outside of a closed restaurant. They were waiting on it to open. I asked what was served, Koshary, only Koshary. The restaurant opened, serving all who were waiting and the new that arrived. Once they sold out they closed.

Do they ever roast the chick peas? With cumin and coriander and garlic and salt and pepper that would be yummy especially for those that can’t have onions.

I love both cumin and coriander in the dish. I put it throughout. I cook the rice and lentils together too.

Hi Michelle, this looks right up our vegan alley! I have all of these ingredients and will make this for dinner tonight. A couple of questions though. What is tomato sauce exactly? In Australia we call ketchup tomato sauce. Cumin and coriander taste vile to me! I usually substitute parsley for coriander but should I just leave out the cumin? Thanks, Barbara 🦘

Tomato sauce is just pureed tomatoes with salt. You can use that, or blend up some tinned plain tomatoes, or add some water to tomato paste. I hope this helps!!

Hi Barbara 😁 Sorry I didn't get to this yesterday. Glad others were able to help answer this. I think customizing to suit your own tastes is perfectly fine. I might just add in something else like garlic powder, etc.
