Glaçage is a coating technique for baking.
It makes cake shine and bright. Also prevents the loss of moisture of the cake.
Do your Glaçage with UNAS!
Glaçage ingredients
- water 32g
- corn syrup 36g
- sugar 27.5g
- deco gel 17g
- gelatin 2.5g
recipe
1. Soak gelatin sheet into iced water.
2. Put water, corn syrup, sugar in a pot and boil it.
3. After boiling it, move it to a bowl and cool it down.
4. After cooled down, Put deco-gel and gelatin into it and mix well.
5. Sieve the Glaçage syrup and store it in a fridge.
*Make Glaçage syrup 1 day before to use.
*Mousse needs to be separated from the mold and prepare at a fridge.
Meanwhile, warm up Glaçage syrup by 45 degrees Celcius. - Temperature is really important!
