Makgeolli 막걸리 is a Korean alcoholic beverage, lightly carbonated, traditional rice wine.
In restaurants, makgeolli is served in special teapots, with the traditional Korean pancake Pajeon.
All you need is glutinous rice 찹쌀 (japsal) and Korean sourdough 누룩 (nuruk)
Wash rice 0.5 kg several times and soak in water for 3 or more hours. Then drain the water and steam the rice (strong- 15 min, middle- 15 min, smallest- 10 min)
Let the rice rest for 10 min and cool it
누룩 Nuruk - homemade Korean yeast, sourdough for Makgeolli. We need about 150 gr.
Grind and fill with water for 5-10 minutes, squeeze and add to rice
Mix well and put in a glass jar (or clay pot), pour 1.5 liters of clean water. Mix and leave at room temperature
Mix once a day (first three days)
On the 6th day (+/- day) the wine is ready.
Strain and bottle. We put it in the refrigerator for a day.
Who wants to get the taste of store-bought makgeolli, dilute with water (1: 3) and add sugar 1-2 tbsp. per 0.5l
