Born and bred in Lancashire and grew up with barm cakes. Been in southern hemisphere for 20 odd years now and making these now.

I just looked at your recipe for Bern cakes as a young boy growing up in Hull. We used to have what they called hotcakes which was soft rolls which looked very much like your barn cakes. They were delivered, hot via an old man on a bicycle with a huge box in the front and I’ve been trying to find a recipe forever. I think your barn cakes are probably the closest I’ve seen so far. Hi .I remember mum makeing these when I was young .they were delicious just with A BIT of butter.she would make some on a Sunday morning .my dad's boss would pop his head round the kitchen window and say fresh bread cakes tonight .everyone loved mums bakeing she could cook and bake anything.she was a lovely cook bless her.untill I saw yours I'd never seen any the same since.memorys .some times she would put dried fruit in .mum made the best bread I ever tasted never been able to find any like them since.i remember her having 2 pansions sat by the fire with tea towels over them.thankyou brings back memories.yours look just like mum made.

I use to have them a lot in pubs growing up in Ontario but I never knew they went by so many names. Especially good with cheese and onion or bacon and cheese, that brings back memories. Thanks Mr. Paul

Aw thank you so much for this. I’ve made bread virtually all my life but haven’t made barm cakes before ( as we call them in Manchester) I always wondered how they get the floury tops, which you’ve now demonstrated, so going to give them a go. Thanks so much xx

I make these all the time now .. since Paul shared this recpie a few years ago .. I freeze my bread after being in the oven. they freeze well and no waste ..

Exactly Lexilooloo, it's the same recipe, but oven aren't the same the days, so oven bottom cakes are a thing of the past. We made them in the bakery because our ovens were similar to the ranges, we cooked on the actual bottom of the oven. Glad it brought back some happy memories of your Grandma.

Wow. The first time I've ever heard anyone mention scufflers. The only difference is that scufflers where I come from are sort of a triangular shape but I will certainly be trying your recipe using lard as I have never used lard when making breadcakes. Thank you.

Hi Jim, where do you come from? In the bakery we made several types of bread cakes so the scufflers were triangular so the girls knew which they were. The oven bottoms always had a thumb pressed in the middle for the same reason. I have made these barms now three times since first watching your channel a few weeks ago and i am addicted. They are sooooo good and just like the ones my mum use to buy from our local bakery when i was young. They are amazing, thank you so much for the recipe and tutorial

Thank you so much for your feedback, I really do appreciate it. I think the reason being is back when your mum bought them all bakers at that time MADE them (no factory) and I was one of them (now very old and retired), Lol

Loved the baps, my oven has just knackered it’s top temp is 110 so have to wait till I get a new one but they look great, again nice relaxed time watching. Thanks

Hi Paul, I watch all your video's but dont usually comment 😊 Since moving from the UK I really miss the good old Barm cake/Bap, I love that no sugar is added (i hate the taste of sweet babs/burger rolls we get here) I found this video again, so i am going to be trying your recipe out. I used to buy them when I was a teenager, but they had a very very slightly crispy top, (not crusty) would they have been sprayed with water? I wish I knew then I could make them.

Yes or a dish of hot water kin the bottom of the oven, both will crisp the crust.

Hello Mr Paul, I'm a bit puzzled, the recipe says fast action yeast yet you are blooming it like dried active yeast. I thought the yeasts like fast action, rapid rise, easybake etc went straight into the mix without needing to be bloomed.Is that not the point of them?

I always do that to make sure the yeast is live, that way one doesn't waste the ingredients if the yeast is dead.

Is it possible to freeze the dough once rolled into the correct size & shape? I have a mini-oven so can cook only 3 or 4 at a time.

Hi Roger, Yes, but will have to wait for them to thaw naturally, then wait the other hour for them to rise before baking. Hope this helps.

Thanks Bill y. In Yorkshire where I had my first bakery in the 1960's some bakers floured the tops and others didn't, we always did, I think it give the barm cake a more home baked look and feel.

Does it have to be lard is there an alternative? Butty's in Warrington because Warrington is in Lancashire NOT! Cheshire as the council like to portray the town.

Yes Brian it has to be lard if you want to keep the original taste. That0s the problem with commercially produced goods, they never taste like the high street bakers used to make because they always change the recipe. Not sure where the Butty comes in, that's just another name for a sandwich not a particular type of bread/roll.

Using E472 and E920 knocks an hour off the process. And ascorbic acid. Dried yeast keeps longer. Not trying to show off, just saying...

If you take the gin out of a gin and tonic you no longer have a gin and tonic. Likewise, if you take the barm (froth) out of barm cakes you have bread rolls.I remember barm cakes as having a distictive taste and indeed regional taste as the barm from local breweries was different. I'm at a loss as to why, with so many micro breweries cropping up people don't make barm cakes again.
