My French great aunt loved those buns when she was a speaker on BBC FREE FRANCE in the UK during the war. She always bought then in Paris rue de Rivoli at WH SMITH. I have seen those tea cakes a few times in 20 years in the UK at the supermarket but they disappeared from the shelves. Anyway nothing replaces the true thing. Thank you to bring our memories back and alive again.

Hi Heather, No, sticky buns were Hot Cross Buns without the cross, They were a more spicy dough than teacakes and much smaller. We made both in the bakery for 60 years.

Being British myself, I have never actually had one of these before! When we have tea cakes they are normally covered in chocolate, with a marshmallow filling and we serve them with a cup of tea for our supper. Going to have to try these! They look delicious. Very easy recipe to follow except I went gardening during the 1st proving and returned to find the dough had reached the top of the bowl. No matter they still turned out splendid. My ingredients made 8 cakes @146 gr. each. I might try dividing into 10 next time .

Mr Paul, Perfect timing. You are one of my fav, British bakers and your recipes never fail. Can't wait to give this recipe a try and report back. Do you have any recipes for large batches, i like to make around 40 at a time as i have a small bakery. Would I just times this recipe by 5? I never know if the yeast needs the same multiplying.

Hi, you can just multiply the recipe for that amount, if you are making what we term small dough mix (less than 3kg flour) there is no need to reduce the yeast, however, make sure your mixer will handle the quantity you wish to make, if you find it slows down then you will have increase the mixing time by around 10%. If you need any more info it's probably best to email me.

Mr. Paul, in case I don't put dry fruits as its very hot here in my country and we don't use dry fruits in summer then how to adjust weight of other ingredients

I'm not quite sure I understand, what has the heat got to do with using sultanas, etc. I live in Spain with summer temperatures at 40º - 48ºC. plus the dried fruits are supplying the sweetness to the product.

Yes you can Tracey but will need to keep it in the refrigerator overnight to retard the rising, otherwise it will be overproved. In the morning you will still have to form them and allow them to rise before baking. I hope this helps.

Hi Naminder, you don't need to add anything, I have use all purpose flour many time when I was short on bread flour. The only thing is, you may find the rise is not as great but the taste and texture should be OK. Do please let me know you get on. I made those as I commented yesterday ( very yummy indeed). I’m going to make them again. I would like to make them less brown, I mean a bit paler, as they will be toasted eventually. As a professional baker you no doubt will be able to give me advice on this. My question is: do I lower the oven temperature? Or allow less cooking time? I don’t want to end up with under-cooked buns… I’m also going to make them smaller (100 gr). Does that call for a shorter cooking time? ( I cook on a gas oven with thermostat).

Hello again Lisca, don't reduce the temperature, just shorten the baking time slightly. Test by tapping the underneath, if it sounds hollow they will be cooked through. I make mine a little smaller due to my diabetes, but in the shop the needed to look like good value for the money!

Hi, perhaps I should consider giving you a few hours warning of a new video so you can rearrange your schedules!! Those gorgeous doggos are playing me something awful the past couple of days. Heavy rain for hours, dogs wanting to go out, see the rain go back to bed, the problem is they take it in turns every 15 minutes of going to the door, me getting up and as soon as I open the door, back into bed. Still I need the exercise I suppose. Nice to hear from you, stay safe, we're going back into lockdown today till further notice,

@@MrPaulsPantry Ha! Yes, that would be fantastic! That way we could be going to bed WITH our bakes rather than having to dream of them! Oh my. Dogs being dogs. Just like us, they have their personalities, their annoyances but we love them anyway! Sorry to hear about the lockdown, hopefully the cases clear up quite quickly and you get back to normality. Here still feels edgy even though many are getting vaccinated and the lockdown is slowly coming to an end. Weird times. But… something you have definitely helped many people through with your superb videos (and doggos). I for one am very thankful. If possible mate, when we come and visit the family down in Benalmadena we’d like to make a trip to you, and thank you in person.

You can also buy 'Allspice' which is ground Pimenta dioica berries and tastes and has the flavour of Mixed Spice.
