just a few of my tips is 1. I know this may sound really weird, but underbake the sponge a bit may make it really easy to roll, maybe just take them out 1-2 minute earlier 2. have a bit of the meringue on 4 corners of the tray so the parchment paper would stick to the tray so that when piping out the meringue, it would not lift the paper up 3. instead of fondant, a truffle can be used to do the pine cone

In Spain, we can find Buche de Noel as well, we called it "Tronco de Navidad". But we make "Roscon de Navidad" for the 6th of January. This day " Los Reyes Magos"The three wise men" bring presents for all the kids. That morning we used to eat a piece of this cake. XX.

For the pine cones, I like to mix equal parts shredded coconut, digestive cookies, add table spoon of cocoa powder and some condensed milk. It takes really good and u can decorate it with almonds :)

Ok. Mushrooms and pine cones are done! Awesome (even though my pine cones sort of resemble porcupines!) 😂. I do have another question for you. 😬I’ve made jelly roll cakes in the past, and the recipes typically say to get that cake out onto the prepared towel and roll within 10 minutes of coming from oven. The technique here is to completely cool and then roll in damp towel. Wondering if it’s this specific cake recipe that makes the difference in technique? Thanks again for your help if you’re able to see this and respond at such a busy time of year! Love your channel! 🎄

Personally, I have had greater success with the cake being cooled since it's more fragile when it's warm and more likely to crack :) It could be because this recipe has so many egg whites in it that this makes a difference? And don't worry about the porcupines! They belong in the forest too ha! :)

We made this one year in French class at school. We did it with ganache icing with fork lines through it though and we also cut a piece off the end to stick on the side to make it look more like a log.

Awe how fun! The first time I made this was 30 years ago in French class too! Ha! I made it with my sister, who was also in the class, it was a complete disaster! So much so we called it the "Buche de NO-BLAH!" ha! Funny what a few years of perfecting it can do. I'll have to send her this video so she can see how far we've come ha! Hope you enjoy!

I’m in the process of making the decorations. Wow, that is a lot of meringue! Might make half as much next time. By the way, I experimented on my second tray of meringue mushrooms and sprinkled cinnamon and nutmeg on them... wow! Love the taste. I didn’t want to track down chocolate fondant so I’m making a small batch of modeling chocolate: good dark chocolate melted and mixed with 50% by weight clear corn syrup. I’m hoping it firms up nicely. :)

Oh, never mind the complaint -- today it's pouring in Florida, and I'm going to be baking up the rest of the meringues with the cinnamon-nutmeg topping, a new favorite! :) I'm modifying a little as our group dinner theme is Italian, so my cake filling will be tiramisu. But someday I'm going to make this as written! :)

Oh that would be delicious! You could do an homage to tiramisu! I would use a mascarpone and cream filling from my old Tiramisu Video and then once the chocolate roll is filled with it and the filling is in. I would then brush the log with the coffee and rum mixture also in the video. Refrigerate. And then moments before serving add the dusted cocoa powder and then the bark. Hope that helps and keep me posted on how it goes! :)
