After watching the entire series, i just wanted to say thank you very much for this incredible series. Because of you, my oven that has stood dormant for 3 years will now be fired once again. Also from a million other chefs and/or presenters/series yours is one of the best i've seen so far and i think it's because of your genteelness. These are my people Logan, there would be no Wood Fired Oven Chef without them. I usually aim for about 700f/360c in the center of the oven floor. That, and using the variable temperature between the fire and the opening, gives me the flexibility I like. Happy holidays!

Clive, great video and great series. A comment or two and a question or two! The roasted tomatoes are a highlight here -- we just expanded on that by roasting them further, and with more garlic, until the tomatoes have really broken down, and served them over pasta -- a very easy, delicious way to enjoy them! Next, we've had trouble finding a Tuscan grill like the one that you utilized . .. . .the only one we could find was stainless steel, and it was really difficult to remove the fish without everything sticking and the fish coming apart. Thanks for your terrific work!!

My husband Bernard built me a woodfired oven as a thank you for donating a kidney to him. I love your videos. We've tried pizzas, leg of lamb and pork ribs with mixed levels of success but as you say, it's a wonderful cooking experience and sharing with friends takes our outdoor entertaining to a whole new level. We live in the damp climate of the north of England so that adds to the challenge! I was wondering what temperature you used to cook the branzino meal. Hello Carolyn. I can't think of a better reason to build an oven. Cooking in the wood oven will always be a reminder of the love and compassion you have for your husband. I heat the oven the same for almost everything I cook, which is around 700F/370C in the center of the oven floor. Then I take advantage of the varying heat between the fire and the opening to regulate where I place the food. Hope you are all safe and well up North. Clive

Listening to you talk about your oven is so relaxing and unpretentious, love it! One thing I would have done different with the fish? arrange them head to tail on the grill and present them the same way, kinda like a tilt at the, "Pisces" symbol, or "Yin-Yang" ? Whatever floats one's boat.

Excellent video again, thanks. I didnt catch if you said what should be the floor temperatur during cooking the fish. Would it be same with turbot fish?

I always fire my oven up to the same temperature, which is around 650-700F/340-370C in the center of the oven floor. Then take advantage of the variable temperature between the fire and the oven opening. More to come.

Hi Clive, these are beautifully created videos, and luckily I chanced upon them as I had just finished building my wood fired oven. The pizza dough recipe worked like a charm, my Italian wife was very impressed and probably a bit surprised Wanted to ask please how you avoid whole fish sticking to the grill, this has been a problem I have had with my BBQ,it, ruins the impact of being able to present a whole fish intact. Once again ,thank you for taking the time and effort to provide us with these culinary masterpieces.

Hello Charlie. I'm glad you like the pizza dough. I season my grill often, with flax seed oil. It coats it nicely and withstands high heat if you use it before the heat burns it off. And also make sure you have a nice amount of oil on the fish. It's definitely a challenge. Thanks for commenting. Clive
