I'm with Jeffery. I expect a side vegetable to be just that; a vegetable that is simply boiled, steamed, roasted, etc. without any seasoning. If it's going to be served with a sauce or special seasonings, it needs to be noted on the menu, at least at a family restaurant. Now at a higher end/fancy restaurant maybe one should expect their side vegetable to be more chef curated.

The song by Coldplay that Jeffrey was referencing, but did not know, was "Viva la Vida". Most restaurants serve sides in separate dishes from the main course. Most of them do come seasoned, but that depends on the region.

Katie, thanks for teaching me how to pronounce "datil." 😂 i loved your food debate. True friends! Funny story, I visited BB Kings restaurant in Memphis about 20 years ago with my boyfriend. The servers were so nice, I don't even remember what excuse I gave them for not eating it. They were excited to have made me a nice dinner, and i didnt want to disappoint them. As a strict vegetarian from California, that really shocked me!

I’m catching up on the podcast and had to come check out the comments for the Great Broccolini Debate of 2024… I hope you know that you both live beautiful and privileged lives when broccolini and the validity of a seasoned side dish becomes a hot topic 😂 As the official voice of Switzerland, I see both your points because there are definitely two types of sides. Regular sides like what you pick when you’re ordering a burger at Red Robin (fries, fruit, side salad type options) or side dishes like what you order at a steak house. I would agree with Katie on this one that I expect a legit steak house style side dish to be more than just a plain heated veg but if it was at a burger joint I’d be surprised if it was more than salt & butter at the most. So it kinda depends on the type of restaurant. Since it was a seafood place and the other sides sounded like side dishes with extra ingredients, I probably would have asked how the broccolini was prepared, assuming it’s a side dish with more going on. But the biggest issue that I think we can all agree upon is that if the broccolini had pesto on it (ewww btw) they definitely should have put that on the menu. The fact that the other side dishes referenced the special ingredients and the broccolini didn’t say anything one way or another leaves too much up for interpretation. Jeffrey was assuming a burger joint side, Katie was assuming a steak house side dish, and both could have been correct… but the menu should have specified. Blame the menu designer 😂

I get Wendy's sometimes and order the same thing...Dave's Jr. w/ cheese and fries. They now offer unsalted french fries. I am all in with Jeffery. If I eat veggies they are lightly cooked with no alterations. A menu should be very specific if they’re going to take something that says broccolini and whip it up into some pesto madness! The same with french fries, french fries are cut, sliced fingerlings of a fried potato with salt, unless the menu is stating that the restaurant will be putting a sauce on them. Now if its an entire dish,as Katie keeps saying, then that dish should specify what type of flavoring is going to be on a dish that has ABC and D includedwith it. That is all.

But the broccolini just said broccolini. So I would expect that to be plain.

I agree with Jeffrey brocollini should be brocolini if no other preparation or ingredients are listed..
@Jebbyfur61Ай бұрын
Broccolini is an Italian broccoli. So they enhanced that. But since they only labeled it as broccolini and not with a sauce, I would have asked for it to be redone steamed. Now as a chef, unless a person asks for vegetables steamed when they order, I’d usually prepare them according to menu. So if Jeffrey likes them plain steamed, he just needs to order them that way from now on. It’s no big deal to the kitchen. Now there is something called truth in menu so the menu should accurately describe the dish. There are actually truth in menu laws in certain states. But Katie, I tend to disagree, as a chef it’s my job to make my customers happy. If they want plain I give them plain, just as I would serve them their eggs over easy, not hard.
@vintageandvinylАй бұрын
Oh, absolutely. They should make it so that the customer is happy. I just assume a lot of chefs at these restaurants don’t do things plainly. I would expect the customer to have ask for that and then they can accommodate. Especially, if it’s a trendy new upscale place that prides itself on creating unique dishes. The place we went was a seafood place that really wasn’t anything special. I would expect them to have more of a simple menu.

Sure! I just chop the brussels sprouts in half and then I boil them and salted water for five minutes. This process is called blanching. Then I dumped the brussels sprouts after draining them into cold ice water. This process is called Shocking. It locks in the freshness in the green color. After padding them dry, I coat them in olive oil with a little bit of salt and pepper. I will then roast them in a 425° oven until crispy. You could also add a little Italian seasoning or red pepper jelly for an extra fun kick. Sometimes I will also roast them with chopped bacon and onions.
