Fougasse is a simple, delicious, and beautifully crusty on the outside, chewy in the middle bread that's easy to make in the wood fired oven. And it it makes a beautiful presentation at the table.
The ingredients for the Poolish are:
240g plain flour
50g Whole wheat flour
290g water
0.2g instant yeast (1/16 of a teaspoon, or just a pinch)
I mix them all together the night before so it can ferment at room temperature, for at least 12 hours
The ingredients for the remainder of the dough are:
875g flour
525g water
2g instant yeast
24g salt
