Rachel! This is brilliant. I grew up cooking and baking with my Granny back in Trinidad. I agree...the smell of creaming butter and brown sugar is very nostalgic. When I bake with our kids now, we use the liquid from a can of garbanzo beans as a binder to veganize my Granny's recipes and it never fails (3 tbsp = 1 egg). Btw, vegan Baileys (made with almond milk) would go down smoooothe with a slice of this!! And YES, we had rum cake with icing at everyone's wedding, lol. Thanks for sharing. 💚💚💚

This is Caribbean rum cake designed in the days in the Caribbean when there were no cars .....lol. In other words please do not drink and drive or take certain medications with this cake. Carribean rums are 40% proof! And If you are feeding this cake regularly.... Five-0 will smell it on your breath. So just in case. Best served : It goes well on its own, slightly warmed with vinalla ice-cream. Other combinations include Baileys, brandy butter.

I make it every year - learned from my beloved mother and will not use any other rum but Wrey & Nephews!!! Its the best but I always soak my fruits in red ruby VP wine for a year. I don't celebrate Christmas anymore, but my family always ask me to bake their cake, I always use eggs and it comes out light n fluffy. One day I'm going to try your recipe Rachel and let you know if I like it which I'm sure I will.

So... after years of being vegan and watching and being inspired by my favorite vegan youtubers (including you of course!) my twin sister and I finally decided to start our own Vegan Cooking Channel! We've wanted to make videos for years but always gave ourselves excuses like: "We need professional lighting", "Our kitchen isn't nice enough", "Our filming equipment isn't good enough"... etc. But we finally just decided to hell with the excuses! The predicaments are never gonna be perfect and that's ok! Because our first and foremost objective is to get our recipes out to the vegan community! And hopefully even curious meat eaters. Being vegan is our life and cooking/baking vegan is our passion. There's been so many trials and errors and coming from an ethnic family there have been so many recipes that we couldn't find veganized online so we had to make them ourselves. So we really just wanted to share our wisdom and love and passion with the community that we feel so belonged to. I apologize for the self promotion but we know how supportive the vegan community can be and we think that ultimately there's no shame in reaching out for support. We are just super excited to start our journey and appreciate it if you check out our channel. Love, love, LOVE this recipe. Bought all ingredients that I didn't have so I could try it. Dried fruit were soaking for a few weeks and I made the cake last night. I didn't use uncle wray, used Sainsbury's own dark and white rum, as well as a cherry red wine. The consistency is very moist; a bit too moist for my liking. However, the flavour is banging. In reflection I think I added too much of the fruit. For a first time making a vegan Caribbean rum cake though I'm impressed. All that's needed is to drizzle some more rum on top lol. Thank you, thank you, thank you!!! I've been soaking my fruit since October, but I've was putting off making a rum cake because it's my first vegan one and I didn't want it to go wrong. You more or less made it the way my mum and I used to make it (without the eggs of course), but I couldn't work out how I was going to make it successfully without the 6 eggs in the original recipe. I'll give your recipe a go for sure. And yes, Wray and Nephew all the way with Guinness (so glad it's vegan) and ginger wine or cherry brandy ( or both lol)

I know this isn't exactly the same thing, but this rum cake reminds me of the Kentucky Bourbon Batterbread that we make at the bakery where I work. My owners use a locally brewed bourbon to soak all of the fruit, and I believe they do it for 9-12 months or so. When they finally make all of the loafs, they use that as their supply for the entire year, because as you said, the alcohol preserves it. We sell them around the time of the Kentucky races, as well as during Christmas time.🙂

CHRISTMAS!! My mom and Aunt are the pro's on making the Rum cake. We soak for 1+ year or years in Manischvitz and Wray and nephew whit rum, we only soak raisins and black currants ( smaller version of a raisin). But want to try the vegan one for my wedding cause my fiance is Pescatarian he only eats seafood.

We do the speed version of the fruit soak and use J.Wray&Nephew White Rum and Red Label Wine! It's an absolute MUST to have them😉😄 I bake with my Mom, Sister and two of my nieces (to pass on the tradition). I'm not vegan but this recipe looks interesting... I might try it with eldest niece who likes to experiment with me! Blessings...😊 🇯🇲

My sister get it for me at the market in Brixton. I guess it depends where you live. If you live in the Caribbean it's a lot easier to get you hand on. You might find it in some health food shop.

Looks amazing! Will give it a go. Wondering if there is a preferred vegan butter brand... one without palm oil/kernel or canola oil? I never use it but have looked at labels in the past while attempting to use it. I don’t care for sickening sweet desserts but even if this was, the alcohol would be worth it... I’d just add a scoop of vanilla nice cream 😁

Non alcoholic cake I've used fruits like dried pears, cherries and cranberries etc and soaked them in a non alcoholic mulled wine.
