I have 2 tips :) When using tap water to cook, always start with cold. It has a better quality than hot water, which tends to pick up more of what is in the pipes. My other suggestion is to wait until the water is boiling and then add your salt. If you add in the beginning, it has a tendency to stick to the bottom, the sides, etc. of your pan. If you add it when it's boiling it will melt right away to make saltwater and better flavor your food. It will also keep your pasta water pan cleaner. Just a couple of tweaks!

These are my fav! Also, don't beat yourself up over it not going as "easy/quick" as you planned. That's when all of us home cooks are like "yep! that's the way it goes" and for those learning to cook with you, it's actually really beneficial to see "oh crap, my cheese isn't melting, what do i do? or oh that is too thin, what do I do?". I grew up watching my momma make Sausage and Gravy and every single time I tried to make it as an adult i would "ruin it" when the roux thickened up because I didn't realize you had to just keep stirring in the milk. UNTIL I watched someone make it on youtube & SAW her make it--then realized I was on the right track all along. I just gave up on it before I could get it thinned out.

Yes nutmeg is always a staple in my mac but the first time I tried it I used too much and it tasted like a cheese cookie lmao definitely just need a pinch 😂😭 but I'm making the Mac this year since majority of my family requested mine. I feel so honored 🎖 😂 and the cheese is definitely alot easier to whisk into a smooth sauce when you do it by handfuls instead of the whole plate. Once all the cheese melts if you add too much milk you end up a little watery. I used to dump the whole plate in and took me a few times to figure out how to fix it. I'm going to add in cream cheese and dijon this year. That was a great idea 💡 👏🏼

You gotta invest in a rotary grater on Amazon. You can shred a whole block of cheese in less than a minute! It’s a game changer! Plus it’s like 20ish buck. We don’t buy bagged cheese anymore, it’s life changing! Plus you won’t take a layer off your finger grating by hand lol

One of my favorite of your recipes! The combination of cheeses is perfection! Definitely on my table this year for both Thanksgiving and Christmas! Edit: George is adorable with his “I’m the star in this house bro!” My Yorkie Poo is the same way, he will totally ignore me until I am in the kitchen or take out my camera and then he is a diva! 😂 Edit 2: I added my cheese and milk and it in thirds so it melted a bit more evenly. Like you said,low and slow is the secret to a great cheese sauce! I didn’t have the flavored cream cheese on hand, so I used a bit more regular cream cheese but next time I am trying the flavored cream cheese! Edit 3: Props to you for recognizing your mama cooking for you no matter how her day went! There are days that I gave in to the pizza delivery, but my son always said he wanted my spaghetti 😂 His big green eyes won every time!

Great recipe I use the same seasonings, love your step by step explaining, thank you. For anyone using nutmeg it is super super strong I only use 1/8th of it for a whole box of Mac and cheese. Try adding white pepper next time😅 just a dash.

I’m no Jordan, but if you’re speaking of country gravy, like bacon or sausage, it could not be easier. “Two, two and two.” Two tablespoons bacon or sausage fat, two tablespoons flour, two cups milk. Make your roux with your fat and flour, add your 2 cups milk and whisk over medium heat until desired thickness. Add salt and pepper to taste and crumbled bacon/sausage as desired. Takes maybe ten minutes, and you can easily increase it (i.e., 3, 3 and 3) as needed.

In the UK we obviously don’t celebrate thanksgiving, so I’m just watching because I like ur videos, I make great mac and cheese but I’m always open to trying different ways of making it, my only problem is some of the cheeses u used, like the colby jacked cheese, I don’t think we have that, what is that cheese? What is an alternative I could use? When I make a cheese sauce, I put the cheese in a wee bit at a time, it helps to melt it better, I think that’s where u went wrong lol well not wrong but u know what I mean. I’m like u, I’m self taught and it’s all about playing about and learning to get it right, but that’s the fun part of cooking, one of my fav things to make is my own marinara sauce, once u make ur own the store bought ones don’t taste the same lol Also with the extra cheese sauce, u could make cauliflower cheese, not sure if it’s a thing in the US but here in the UK, it’s a thing, it’s soo good, it’s even better adding some broccoli

instead of the philly onion and chive, check out Boursin cheese, its also a spreadable cream cheese.... but its amazing and is the luxury version of cream cheese, best of the best... enhances every recipe you put it in.

hey! just here to say, that sometimes a more liquid-y sauce is good! if you're cooking a large amount of mac for a big meal, sometimes it can dry out! you have to make it a couple of times to figure out how loose your cheese sauce should be. 💛 keep the content coming! you're doing amazing.

I might pre-cook it all the night before next time because by the next day, OMG…twice as good. The only thing I did different was use some velveeta style cheese in lieu of cream cheese evause i wanted a littleee bit of that kind of cheesy flavor. Definitely added to my thanksgiving lineup going forward 🤌🏼
