The tamarind paste is really important in getting a proper Pad Thai flavor. John added citrus in the form of lime, which is just not the same. A lot of people don't like tofu because they don't know how to work with it. Straight out of the package, tofu has very little appeal in flavor or texture. However, properly frying the tofu is one way to really improve the texture, and tofu is a flavor sponge. It takes up the flavors that you cook it with. Seasoning the oil with some salt, pepper, and chili flakes alone will make a big difference, and give it a little time to drink in the Pad Thai sauce flavor to get it to peak.

None of these are traditional and that slightly hurts the Thai part of me (Italian/Thai person here though so this isn't coming from a traditional Thai), but I came to terms with this vid and I love that a) people care this much about Thai culture/food (same thing really) and b) the ingenuity of elevating the original, from amateur to pro. Traditional doesn't always mean correct and I'm happy with that. Besides, what Thai cooks like their neighbour anyway.

Hehe, as a Thai person watching this clip... I appreciate their interpretation of Pad Thai ;) ... It's just close to, but not Pad Thai we cook and eat in Thailand...

@erzengelchen28303 жыл бұрын
@@fibonacci2112 What also helps is to actually blanch the tofu in salted water for about 20 seconds and than spread it out on some kitchen paper or towel. Because of the heat and the salt, the water literally steams out of the tofu and the towel absorbs the moisture on the bottom of the tofu pieces. Thats a great way if you're in a hurry or forgot to press the tofu before you're starting to cook

Even I’m Thai. Pad Thai is hard for me to make delicious. My pad Thai always too moist and the noodles always stick together too. But it’s tastes good, for my friends and my family at least 🤣
