Fantastic video, sent me on a tour to see where I could get some of those. However, I'm sorry to say, I think for some of these you're getting ripped off in the US. The Vacherin Mont d'Or costs around 21€/lb here in Europe, the Torta del Cesar around 20€/lb, 1605 Manchego around 20€/lb as well. That difference cannot be purely explained by logistics. I didn't do the check for US cheeses, but maybe it's worth considering that not all fresh products need to be made available everywhere.

its not that profitable to import more fancy cheeses, or foods in general, especially with something that needs to be refrigerated the whole time. I doubt the margins are that ridiculous, but i suspect the import and tariffs are the problem. especially since these cheeses all seem to be mostly "farmstead" so are extremely labor intensive to make. Also you claim these all look "normal" I doubt you can find these in a Asda or what have you but honestly id love to further mythologize the European continent in my mind with the thought that they have dozens of premium cheeses everywhere for eyes to see XD
