it's really good... not harsh like most Italian tomato sauce but really soft and sweet. Similar taste to tomato soup; I love to eat it with ravioli.

Where does Nonna live? I would love to come cook with her! I miss my Nonna so much. She grew up in Bari and I started cooking with her as a very small child. It is some of my greatest memories. Thank you for sharing.

My grandmother made her sauce this way...not sure why she made Roman style (all paste) sauce as she was from Naples...but it was delicious!

If I ever asked my Nonna so many stupid questions while she was cooking, she’d have smacked me up upside the head. “what kind of salt?” After giving me a look of “what, are you stupid?” a smack would surely be the next step. She’d say, “Pay attention...eh? Enough with your mouth, now you look, you learn it, yes?” I just started watching this series and I like the videos, but if you talk constantly and ask as many stupid questions in the other videos as you do this one, then i’ll have to pass. Christ, just let her cook!

Do you suppose this is a daughter in law and not a daughter? I think the Mom would have been a lot more direct with a daughter and wouldn't have put up with as much interference.

By eye and adjustments as you go. This is the reason why great chefs carefully watch other great chefs, and/or spend many thousands to attend Cordon Bleu etc.

I really appreciate what this person is trying to do.... But unfortunately there are a LOT of issues... not just technical but also with the recipe and how things are done... Sugo is a very important in the italian culture, but the American culture has done alot to change and alter what it was in the old culture....

Arthur Dicrescento I think this basically Roman recipe is far more economical, faster, lighter sauce than Sunday Gravy , which is American-Italian, has LOTS of different meats, and takes hours of time preparing and cooking.
