Omg I love your mom, she is adorable...I want her to cook for me. She reminds me of my mom and grandma. Mexican mom's have a lot in common with Italian mom's, they take pride in there foods, it's made with a lot of love and full of culture. God Bless Nonna.

Pasta e ceci is pasta with chick pea sauce. We make that too where I'm from. Love both bean dishes. The beans your mom cooked were white beans - the canned beans were cannellini (kidney beans) - two different beans. Your mom's preparation looks delish by the way! I'm watching this at 1AM and I'm starving! Is she from the Puglia region? She must be!

In my Nonna's house her daughters did the cooking Nonna gave the instructions, Italian was the only language used in the kitchen. Notice the fresh green salad and the bread in the bowl under the towel on the table. Nonna Paolone is the genuine article.

Yes, pasta e fagioli is not supposed to be a soup. It's supposed to be a pasta meal - I have always had it prepared that way all the years I lived in Italy. Not sure why in America they call it a soup.

Cento whole plum tomatoes are the most like home canned ripe tomatoes that you can buy in a grocery store. Bought 8 cans...opened them all and tested. Hunts and miran( ? Not sure of name...) organic were worst. What else does an organic gardener do with curiosity and extra time do? .

Romans add a diced potato not always meat.I dont use meat..the canned beans i perfer are low sodium GOYA brand Progresso are mushy..I do like Centos but i perfer them bottled in glass..all tomatoes..get them in any Italian salimeria..Market.. I cook dried beabs also with celery and i add a bay leaf or two I freeze plain beans of all kinds too..when i cook them i make extra just to freeze plain..same pasta but i like the smaller dilatini and my soup a little wetter...this is a "Seca"...soup"...dry soup..I love the died potato in it..its GOOD...

I cook my nacaronis seperate as Well but i mix the pasta in the bean pot cook 1 minute together it will expand too much if cooked together i just do it a min to blend and alls hot abd i like it a but wetter..i add minced carrot onion garlic cekery parsley and the red dried pepper i get whole crack open throw out seeds and ribsits just heat not really flavor the skin gas flavor the peppers flesh it dried in it I add a piece with vegtables and olive oil cook lightly add potato water cook a bit add beans vean water some eyeball it and tomatoes cook till i think its done then mux cooked pasta in vean pot..yea some fresh vasil if i got i like parsley cos its good 4 u Vitaman K..a bit of oregano bought dried on branches sold in bags ONLY JUST A BIT ITS NOT PIZZA! Leftovers always good..gotta add water the Macs soak it up !
