Rick - my local Mexican market carries that kind of green squash. What's interesting is that it's the same squash that is used in the middle east for kousa, or stuffed squash ... it is way easier to scoop out for stuffung than zucchini. I wonder if that was something also shared long ago by the Lebanese who immigrated to Mexico.

Me too! They're so good when roasted. I roast a bunch at a time so there's always a bag in the freezer ready to use.

We have many Mexican vegetables in Houston and San Antonio Laredo. We get vegetables from all over central America too.

thanks for the video rick.... i watched an old video of you and your daughter cooking together and you both touted a powdered Mexican spice mis that was lime and pepper based i think.... you said it was a common condiment in mexico, any idea what it was? I live in KY, do you have a source of mexican seed varieties for gardeners?

Could that spice be Tajin? It's limey and peppery and reddish brown. It's easy enough for me to find living in Arizona but if you can't find it in your grocer spice area then you could probably find it in the liquor area near the salt wells for rimming drink glasses. Hope this helps.

The owner of the restaurant I work at in California just came back from a wedding in Tulum, and she was telling me that all of the food they tried was horrible, corporate owned Hotel food....they went into Tulum proper, and had some decent drinks, but still couldnt find any decent food. I asked her if she had visited Hartwood, and she said No....so, maybe that would have been a shining light in their otherwise dismal experience in the Yucatan. Is the area around Tulum generally known for corporate resorts and tourist traps?

Coconut Bread Pudding: For me use vegan butter or coconut butter. Also, no or little wheat for me so I would use Keto or Paleo bread. But to make for someone else or other parties keep as is, great.

For the love of god, Rick loves using metal utensils in non stick pans. People, don't do this. That all clad non stick is like $200 and you will ruin it first use. Wood only guys. I've seen him do this over a dozen times now.
