So many wonderful memories of the Yucatán. Coba, cenotes, fresh fish on the beach. Ah have to go back.

That octopus ceviche looked so delicious. Unfortunately where I live the only “fresh” fish I can get is in the supermarkets. No fresh octopus or calamari. Thank you for all of your wonderful recipes.

In addition to being highly intelligent creatures, they are also quite 🐙friendly. So, because venison can be considered by farmers as an intrusive pest and because venison is considered a healthy and delicious alternative, I'll choose deer meat instead. Nevertheless Rick, the ingredients and the preparation did inspire me to use this recipe, just on another protein source of meat. Thanks!

Hi Chef, Thank you for that interesting video. I love onions, so black onions would be something I would love to make. Black ricotta paste? Recipe for this interesting appetizer? I am going to try and make the Manjar Blanco. I don't travel so thank you again for my trip to theYucatan!😊

Black Recado - roasted pepper is ground and made into a paste that can be 'hot' or not. Added to make the paste are garlic, cummin, oregano and a Little vinegar to form the paste.

Okay, call me a wimp, but there's no way I could ever prepare an octopus dish. I'd be too busy screaming. However I think the pork belly dish and the manjar blanco looks really awesome. Thanks Rick!

And if we all knew how intelligent octopuses are, we would be reluctant to eat them.
