IMO, the deglazing method is the best when it's something like beef or whatever. Doing it on sausages just sounds like you're fuckin getting some pig intestine juice (coz that's what the sausage is wrapped in iirc), and while I do enjoy pig intestines with sweet and sour sauce, gotta say, there's really not much "juiciness" to pig intestines, it's more like calamari. Broth and the drippings from the pan is a good one in that case it sounds like. You can also blend in a bit of chicken liver if you're into the flavor like I am lol
