Seriously, I could listen to 3 hours at a time of these discussions. The living out of the faith, the interjection of humor, and the practical points all rolled together are just beautiful. When you mentioned beauty being your primary motivation, I felt so validated. Genuine beauty is so powerful in discovering truth and goodness, for me.

Thanks for the channel. You are knowledgeable, sir.. I thought I knew a lot about home butchery until I saw you guys. Idea: Timeline after slaughter. So you've dispatched animal, gutted, skinned and hung it to cool and age. What now? You got a pail of bit and pieces. Do you wash out intestines before breaking down the primal cuts? When should you mise en place the sausage ingredients? Offal preserving or fry up for lunch? I just wing it. But I am always ALWAYS wishing I had a checklist and timeline. I think this would instill confidence in perspective home processor.

I came for the foie gras and stayed for the theological ruminations :). You weaved liturgical references throughout and then at the end stated that once the kill begins, the whole process MUST continue... much like the Mass, once begun, must continue regardless of extenuating circumstances. Looking forward to part 2.

Thanks for sharing. How many english majors does it take to count to 4? It depends... 🤣 However casual and seemingly unstructured the exchange was, it turned out well-rounded and balanced. The foie gras making process was sadly left out. It would be nice if you covered it in detail on the next round, especially for your fellow countrymen. The difference between goose and duck-based foie gras, the type of feed, yields/time/bird, history (Ross mentions South Western French ancestry which is the home of foie gras) ...the technical stuff is just as interesting as the philosophical considerations of homesteading and mankind's struggles which I must say you communicate with great efficacy. I am trying to get to a point where I can farm. But I am in a townhouse in chicagoland with no yard. This year in particular has made it so obvious that I have to go back to primary recourses to support my family but I can't see how I can in this position.

Re-listening to our conversation, I realize that I made an awkward comment that sounded like the complete opposite of what I believe (but wasn't intended that way) when I referred to your desire to have more children. We plan to have as many children as God gives us, and we certainly agree that that is our "duty", as you said, within the Sacrament of Matrimony. Let us know when you have your Marius 😉
