I'm African American and I love Nigerian food so much that I was asking my Nigerian friends to make me rice, stew, and egusi soup. I got tired of asking them so much that I start watching U tube videos. My Nigerian friends are now impressed by me cooking there cuisines with perfection. My husband absolutely loves Chicken stew 😋. It's my absolute favorite dish to make. It took me awhile to get it but I was determined to cook Nigerian food. Great video you guys

Ingredients for my Nigerian stew Sweet pointed peppers Vine tomatoes (it has a sweeter flavour) Bell peppers Onions (red) Scotch Bonnet (Habanero) Garlic Curry powder Thyme Knorr cube Pink Himalayan salt Veg oil Fresh ginger or ginger powder Homemade stock Fried chicken, lamb fish or beef (which I discover adds more flavour to the stew) I never use tomato paste. Vine tomatoes and sweet peppers substitute for the tomato paste (this is my opinion). I use my glass blender so it doesn’t have any impact on my smoothies 😜 The preference is yours. It appears Mrs Godfrey you did well with your debut Nigerian stew. Good cooking & all the best. SOBlessed! From London

Welldone. For can tomatoe paste, fry it for long but on low heat till all the tanginess is gone (it will start to look like small pebbles) Also, the can tomatoe isn’t compulsory to be honest. Bell peppers are very sweet so to balance it, you can add the long red peppers and very small green long green peppers. For more intense flavour, you can boil your chicken and use the fresh stock to cook the stew. Whenever you want to make Jollof, grill the peppers in your oven first before blending (to a smooth paste), it gives it that rich Smokey flavour.

Erica, quick cooking tip. You can place a kitchen towel under your cutting board to prevent it from moving while you are cutting up your food. Hello from Trinidad and Tobago

Woww good job Erica. Just stick to fresh ingredients (no tomato paste or anything canned like you felt). When you take out the canned stuff, you can skip that 1st step of frying the onions, just blend all your ingredients, throw it in the pot, put your oil and fry. When I started making stew I found that it was harder for me to get a nice tomato stew than when I did a majorly bell pepper stew. I personally don’t always like tomato stew taste lol. I prefer the sweet and savory taste of bell pepper stew and it’s hard to mess it up too. Tomato can be tangy and it takes longer time to cook than bell pepper stew. I even add different color bell pepper sometimes when I want to be fancy (this one is called designer stew 😉). My ratio: if I use 6 red bell peppers, I either add no tomato or I add only 2, the rest of the ingredients remain thesame.

Good job, Erica. For your first time, that was great! Tomato paste is not always used for stew. In my own opinion it is better for jollof rice. Fresh roman tomatoes, red bell pepper and the habanero pepper (yellow and hot) with onions, ginger, knorr powder, curry powder, thyme are my major species. I like to use my fresh chicken broth from my chicken. Cooking the sauce longer on low heat makes it taste better before pouring the chicken and broth. You followed the entire process, so I agree with Brian and Tim that it came out great. With time you will be more comfortable and before you know it, you are making a pot of stew with your eyes closed. LoL. Great family! Keep up the good work!!

Good job. I really like your husband encouragement. Remember about 15yrs ago when i started cooking my mom would encourage when I didn’t think it tastes good. Over time I have improved my cooking skills and cooks for family gatherings by the grace of God and my mom motivation. My little tip of getting out tomatoes paste tarts. Add little baking powder or fry it the paste longer. I give u 10/10. Love from nyc.

❤❤❤ Mrs Godfrey. Tim my brother. Your oga then is he alive to see how God has lifted you? Wuyen oma you need the right kinds of pots to cook Nigeria food. Non stick wide pots are better than the stainless deep pots 2. Tin tomatoes always have an acidic taste if not fried long enough that's why the non stick 3. As a Nigerian born and breed I don't know how to cook certain meals but KZbin with sis yemi, joyful cook helps me alot. 4. You did good on the stew. Practice makes perfect😊

Great couple. I love you guys. Thank you our Anambra queen 👸. You did excellently. You’re right you shouldn’t have used the whole can of tomato paste. I love using little tomato paste and the chicken stock/broth for my stew. Comes out very nice. Great job Erica Tim Godfrey.

Well done, dear ‘Chinyere.’ You have done well. The fresh tomatoes should always be more than the tinned tomatoes. But some like stew without tinned tomatoes at all. Good job! It looks delicious.

I totally love this video.. I like that Bryan said it's different but I like it. Plus, honestly speaking with that much well seasoned chicken in that pot of stew,it MUST be tasty. D only issue may be the ratio of tomatoes to pepper. I personally prefer fresh tomatoes, pepper and onion. I only use sachet tomatoes when fresh is scarce. This was a very good video. I love you both. 🥰

Good morning Ma. This is Amaka from Nigeria. The stew looks good but next time when you finish blending put inside a pot and heat up until the mixture dries before you put your oil to fry a little, then your ingredients

Yes it's the can of tomato paste, I cook with it all the time and a whole can is definitely too much for one pot, except if it's a really really big pot. But I'm sure it has some gd flavors in the mix 😂

You did so well chinyere,i think from your reactions you didnt allow the tomatoes to dry so it loses its sour taste befour adding your chicken. Try another method,using only fresh tomatoes and preferred pepper allow it to dry well then experience another taste.your humility is amazing kudos

Really nice tbh. You can use just blended fresh tomato puree and fry for long before adding broth or little water at the initial stage, helps with taste and stew thickness later on. For the most part, canned tomatoes may not be needed except based on your choice or for jollof rice.

good job ..I loved watching this episode. You don't need tomato paste for stew, once you let the tomato and pepper fry for a while then it thickens very well. I think in the US the best tomato to use is plum tomato, less acidic for our stew. I enjoyed it from the screen.

Erica pls wear gloves to cut those pepper next time because you are still breastfeeding if am not wrong. Because normatter how you wash your hands, if you breastfeed with it, the baby will feel it, or you may accidentally rub your face with your hand sometimes. Secondly, use smaller pot for stew, thirdly, never full up your food processor with pepper, it will damage quicker. No 4, get cooking Apron so that the pepper will not splash on your cloth. You did amazing job and I love all your videos. ❤❤❤ God bless your family ❤❤

A tip that may help - use little or no canned tomato paste when you cook stew 😊 For me - I do like 10 Roma tomatoes/ 1 habanero pepper/ 1 red onion because my family does not really like spicy food.
