Today we'll see a quick and tasty appetizer from Ancient Rome; the Epityrum, an olive paste from two authors, Cato the Elder and Columella.
In both recipes, I used rosemary to replace ruta.
You can find Cato's and Columella's works in Cato the Elder, De agri cultura (118,119); Columella, De re rustica (12,49).
