When my grandmother passed away I asked to have her blue cornflower corningware collection of baking dishes. I had so many happy memories of my grandmother’s cooking and all of the great meals she had prepared over the decades. That is what I use and it never disappoints.

@@jase_allen Hang onto it; the used prices of even moderate condition Corning ware discontinued patterns are outrageous, between 80 and 100 USD$ a few months ago. Mine was used daily for decades and has no signs of wear, no scratches, no gray marks [I use only Bon Ami scouring powder] but never oven broil in it; for that I use the oven's actual broiler pan and only rarely. In the 1990s? my family gifted me a large set of the all white/no pattern Corningware [did not need it but they didn't bother to ask what I did need] and it too has held up perfectly. Since then, I regret gifting many pieces of both patterns to the son of a longtime friend whose son got married [had my doubts] and sure enough the marriage only lasted 6 months. The mother knew and appreciated what I had given but neither the bride nor groom gave a flip. Oh well...I still have two great stainless Revere ware copper bottom pieces from my parents from the 1960s, and one cast iron skillet from my great aunt/great-grandmother from the early 1900s. I appreciate it but is too heavy for me to use safely due to disab.

When ATK puts out these videos the winning item gets a huge sales spike which then leads to a price spike. If you want to save some money, add the item to your cart or wishlist and wait a few weeks. The price will go back down after the initial wave.

I own the one on the far left (with the small handles). It's a La Creuset and it's a beautiful color and made amazingly, but yes the handles are a little small so be careful with it!

I respectfully disagree bc the max heat for Mrs. Anderson is only 500 degrees. I’ve had previous 500 degree pans crack in the oven while baking at that temp (broiler) I ended up buying Staub for its high heat point. (572degrees) And it’s beautiful!

To supplement my classic Pyrex glass 13x9, I have three steel pans, one 13x9 and two 15x10s. They didn't cost anywhere near this much and they work just fine, including under the broiler.

The original winner seems to be in short supply now. You can find it (at prices up to $75) if you search by name. I have the 2nd place Pyrex. It performs well, but straighter sides would be better for building layered dishes, and the handles are a little narrow for thick oven mitts. It's also a lot less attractive than the Mrs. Anderson's.

Maybe I missed this but is there a list of all the various dishes tested? The Mrs. Anderson (whoever she is) dish is very hard to find (impossible in Canada) and is nowhere near $37. Also this review did not mention what these dishes are actually made of. Isn't that what we want to know? One thing you can be pretty sure about is that a metal dish, e.g. hard steel or even a nice heavy cast iron pan won't crack under direct broiler heat. Fraid to say this was a sloppy review, not what ATK used to be about, empirical, complete and useful info. The wrong link really tears it.

Well, I can say they I think had Staub and Le Creuset in that bunch I think both are cast iron, though some of the LC ones look to be ceramic or a ceramic composite, though I've seen them with chips showing the cast iron underneath along the edges.

@ SANDRA - porcelain is a number of glass coatings fired at 900 degree F on top of some other metal, like steel or cast iron. It is not an entity unto itself. You write of it as if it is. Ceramic baking dishes (from the Good Cooks brand in the supermarkets to Corning Ware) all have a glass surface by nature - the interior is a clay. And like glass, they are breakable when dropped. And yes I agree it would have been helpful to state the makeup of each pan as it was discussed.

I’m not sure if they tested any porcelain dishes, but those would be the top of my list. I’ve taken my Pillivuyt dishes straight from the refrigerator and put them in the oven with out any issues. It may be worth a look.

Those big handles also make it so that the dish will not fit in a countertop oven. Not everyone has those giant, insanely expensive Wolf ovens they have in the ATK test kitchen. Stick to a standard size pan with smaller handles, and use less bulky kitchen mitts. Or, do as chefs do and don't use mitts, at all.

The first one looks like a French made Pillivuyt. Of course they aren't going to say it's the most suited one, it's the most expensive one, I believe it retails for about $173 because it's durable porcelain. That said, it will long outlive you, it's extremely durable since it can go from freezer to oven, it has a beautiful shinny thick glaze and a crisp perfect white. If you find the handles impractical, they have other collections that have bakers with bigger handles.

If you want something durable but heavy, get the Lodge cast iron. It will handle the broiler without a problem. The only thing the broiler will do is flake off the seasoning. It goes about $40 and will last for over a 100 years.

Personally, I think ATK got a little petty on this review of baking dishes, not to mention insulting the intelligence of their viewers. The critique of the handles was the only one that really seemed to matter. If I'm worried about a recipe in a small dish spilling over, then I simply place a baking sheet underneath. If the large dish makes some recipes look puny, so what, next week I may need the extra size to make a lasagna that feeds 12 guests.

Amazon changes their prices almost daily and there is no rhyme or reason to it. (Though I'm Canadian and shop through Amazon.ca) I usually wait until I am sure the price is good. My Matfer carbon steel pan varied as much as 50% from about 70$ CAD to over 100$ CAD. And there is no relation between pan size and price. Smaller pans are often more than larger pans. My current example is the Amazon price for a 1 cup pyrex measuring cup is 3 times the shelf price at Walmart right now! Often Amazon really gouges you on price so best to shop around.

This looks like a wonderful baking pan, and I found it on Amazon and put it in my wish list. But I have two major complaints here. First of all, the link provided below this video does not take me to the item that one the test. There is no excuse for this, and it needs to be corrected. Second, the price on amazon, as of December 19th, 2022, is actually $61, not $37. I know the price increase is not the fault or responsibility of ATK, but it is still frustrating nonetheless. Even so, I'm willing to pay for it. The one thing that makes me hesitate to purchase this baking dish is the fact that there is no lid made for this thing. It would be tremendously helpful to have some sort of lid fitted to this baking dish..

I don't know what ATK's favorite metal pan is (maybe it's nonstick, which would definitely be damaged by high heat?) but I *can* say for a fact that my favorite no-particular-brand all-metal pans work fine under the broiler, every time. You don't need a $38 or $75 or $200 pan for this purpose. Go to a restaurant supply store.

I just know that it's most definitely possible to use all-metal pans under the broiler, with a proper pot holder or oven mitt of course.

Because of the type of glass it might fail from thermal shock. Worst case scenario is it will explode. But that often happens because of user error and not the pan itself. Slo Mo guys did this and filmed it.

If the baking dish is not at least 3 inches tall, then it's not useful to make a good lasagna.
