WINNING TRAITS OF A GOOD DIGITAL SCALE
- Consistently accurate within 2 grams
- Clear, easy-to-read screen that isn’t obscured by large items
- Responsive, intuitive, easy-to-reach buttons
- Removable platform and/or tight seams that keep out food and water
WHAT WE EXAMINED
ACCURACY: We tested three units of each model, weighing 30-, 200-, and 500-gram lab-calibrated weights 10 times on each unit, at the beginning and end of testing. We preferred scales that gave consistently accurate readings; models that routinely varied by more than 2 grams lost points.
EASE OF USE: We timed how long it took to turn on the scales, switch from grams to ounces, and measure 5 ounces of flour. Several test cooks also subjected top-performing models to a week of daily use. The best models had intuitive controls that were easy to access.
LEGIBILITY: We preferred digital displays with sharp color contrast or a backlight option, big digits, and large screens. Scales lost points if a 5-quart mixing bowl blocked or obscured the screen.
DURABILITY: We dropped each model onto the counter from a height of 2 inches, checking to see if any pieces fell off or if the scales became damaged.
CLEANUP: We stained the platforms with a measured amount of yellow mustard, tomato paste, and canola oil; after 36 hours, we washed them by hand. The best models had removable platforms that we could wipe off or scrub. Scales that trapped water and food residue lost points.
ABOUT US: Located in Boston’s Seaport District in the historic Innovation and Design Building, America's Test Kitchen features 15,000 square feet of kitchen space including multiple photography and video studios. It is the home of Cook’s Illustrated magazine and Cook’s Country magazine and is the workday destination for more than 60 test cooks, editors, and cookware specialists. Love this women's attitude - many options to pick with good features. She always has a great presentation & everything was said in detail. Now with them putting in all the hard work It makes my comparison shopping easier even though I'll still do my own research this definitely narrows it down. If you test it, I will buy it... now adding to Amazon list lol 😁 Thank you & the staff great jobs as always

Ever since I started weighing my ingredients three years ago, the consistency has so improved. I only wish TV cooks/chefs, home cooks and bloggers would offers all of their recipes in weight. Makes a world of difference. It's an acquired skill like anything, but the average person doesn't want to change what they bleieve is "working' for them.

I think one more feature worth mentioning is the poll rate - how quickly the scale updates the reading. I have come across scales that are accurate but take up to a second or two to update the display causing over-pouring.

I have 2 Oxo kitchen scales, both fairly new. One was a gift, which is the same one as CI pick on this video. Neither of the two scales are accurate, and both of them vacillate in weight as the food sits on the platforms. I've never been a fan of either of them. I had previously owned an Escali Pana for 10 years before it stopped working. It was a great accurate scale. Runs about $80 on the Escali site, but I just bought another one on Amazon for $46.29. They also feature it on the King Arthur site, so that says something. King Arthur helped design the code system that allows you to weigh things by volume with this scale. (comes with a laminated sheet of codes) There are 100 plus items that have codes. For example, if you need however much brown sugar, you find the code for brown sugar, enter that code, and it will weigh it in increments of 1/8ths, 1/4ths, 1/3rds 1/2ves, 3/4ths, 1 cups or by 1/2 Tablespoons. This is really convenient when converting recipes that have no weights for ingredients. It's considered a baker's scale. Saves a lot of cups and spoons when you're throwing something together, and the accuracy is spot on. The other two will go to the thrift store. Here's a youtube link for those that are interested: kzbin.info/www/bejne/bqXHdKSEq6-trJo One last note if someone from Cook's Illustrated is reading this,....It would be awesome if you'd include weights in your recipes! (Like Kenji does!)

Thanks for your review. I absolutely love using a digital scale. It's great even for things like tahini. I measure once and then weigh it, making a note on my recipe. This way I don't have to try and measure out 2 tablespoons and scrape it out, etc. Next time I simply put my container on the scale, tare it out and add xxgrams and I'm good to go. We use ours ALL the time! We also love OXO products, they're great. Debbie in WA Ü

Thank You! There are SOOO many digital scales available, it's difficult to make a decision! Your Review answered my questions, and showed quickly and easily the best performance for my baking needs. I went out and bought the 11 lb. 'pull out' OXO. Today I will bake bread from my Grandmother's "non-fail" recipe that she used EVERY WEEK in Colorado during the 1920's to feed her family. My Baking Story: A young friend 'K' who is learning "scratch" baking and cooking, asked me to instruct her for her first loaf of bread. My Mother was a Chef, and I baked and cooked professionally many years. At her house, my friend 'K' pulled out a digital scale. It had been so long since I baked, I had forgotten about weight vs. volume measurements. We had a blast! The bread was not perfect, as the house was too cold, but we laughed and laughed. I decided to go back to "scratch" baking. We live in Colorado, and high altitude baking is a science. In fact baking IS SCIENCE. Cooking, soups and such, just dump it in a pot, turn it on, and Voilà. Baking will fail! I bought 5 different 5# bags of flour. When I opened and compared the flour, it surprised me. One bag "well known All Purpose" White flour had very fine delicate grains, it looked like double sifted cake flour, while another well known Whole Wheat flour had large coarse grains. It was obvious, for Baking Accuracy, Consistency AND SUCCESS, the Baker must use weight over volume. Thank you again for your review.

I've been using the Ozeri scale daily for eons & will happily vouch for it. After five or six years, the clear plastic shield covering the flat buttons wears away & you may want to buy a new one, but otherwise it's great. Completely worth the $ & saves a lot of messy time jockeying chopped & liquid ingredients in and out of measuring cups, once you know what a cup of chopped onions weighs....

I have an even better suggestion: The Ozeri Touch Professional Digital Kitchen Scale in Tempered Glass, 18-Pound, Elegant Black. I have had it for three years and am blown away by how user friendly it is. The surface is sleek black glass, so it might not pass the toss it on the counter test, however it sure passes the museum quality test. Switching between units is easy, although I generally like using grams as my universally unit. The "tare" function allows for successive measurements which is quite a joy whether making a recipe or putting together a dinner plate of separate foods that you want to input on your Cronometer food diary. For either of these tasks, it works amazingly well. The problem of not being able to see the read out is easily solved by first putting a small bowl or custard dish on the plate and taring it to zero, making the read out completely visible even below a dinner plate. Cleaning up the Ozeri glass is a mere swipe of a soapy cloth. Nothing about this scale is fussy. The battery lasted three years. The Ozeri Touch Professional Digital Kitchen Scale is super slim. I store it on its side by slipping it into a small cupboard space just above my food prep station. I hope you add it to your next scale test.

My OXO good grips 11 pound scale has gotten a bit indifferent to small weighing tasks. Even with new batteries, it doesn't want to measure one gram of yeast for my Dutch oven loaf recipe. If I add to my zeroed out bowl slowly, it wont move from zero. If i add quickly, it measures when it is a few grams. Six grams of salt measured well.

I purchased the $50 Oxo scale on the first recommendation, and was glad to see it was still “top of the heap” in this review. The scale has been in near-daily use for years and still works as new. The ease of zeroing the scale is essential and a constant use function, as is the ability to swap from Kg to Pounds while using many of my favorite British and European recipes. The pull out and backlit control panel is awesome when weighing larger items. This is, beyond doubt, the best designed and built scale I have ever used. Although I was initially reluctant to spend this much for a “simple scale” I found that, in use, it would be a good buy at double the price. Like the Thermapen thermometer, sometimes what appears to be high priced turns out to be quite the bargain. Good job, Lisa!

I bought a Taylor (owns Salter) scale, and it died in 3 months! No more Taylor kitchen gadgets for me. I had bad luck with their thermometers as well. I liked that scale; too bad it died I got the Oxo you mentioned. I'm satisfied with it about 1 month into ownership. I made Jambalaya from a box the other day, and in the past, I just chucked in maybe 1.5 lbs of meat without knowing it. Using the scale, I measured almost 1 lb, and the taste was completely different. I used to think that the scale would take up more time, but I'm finding it might be a little faster than using scoops. In the past, I used the King Arthur Flour "floof and scoop" method, but since I don't have to do that anymore thanks to the scale, I measure faster.

I've have major issues with the battery saver timers. They are not adjustable and you cannot shut the timers off. This is a major problem when doing bread baking. I've had my scale shut itself off while in the middle of measuring. Turn to get an ingredient and BAM! Back to zero with no way of knowing what the reading was before it powered off. I'm an electronics hobbyist and have the parts to build a digital scale. I'm through with these. Too much hassle. I'll make my own.

Can you measure liquids in milli litres?

Sure. 1 ml of water weighs exactly 1g. Oil is a little less, but it's not really enough of a difference to worry about.

Why doesn't OXO food scale have an ON/OFF button (4 minute shut-off is way too long)? How does AWS food scale stack up against OXO?

I need to measure 1 gr for my Italian recipes, which scale is accurate for that? I have a beautiful Salter but doesn’t go lower than 5 gr. I really need an accurate 1 gr. I spent a lot of time looking for one but the reviews are not great.. I would appreciate if someone helps me thanks

My OXO couldn't give consistent measurements. I replaced it with a professional scale Avaweigh PC10 and it's also inaccurate. This is so frustrating. Anyone know of a CONSISTENTLY ACCURATE and easy to use scale? Ideally accurate to 0.5g.

I finally found an accurate scale. The Ohaus CX2200. us.ohaus.com/en-US/Products/Balances-Scales/Portable-Balances/Compass-CX/Portable-Balance-CX2200-AM America's Test Kitchen should retract this video review as it is unscientific and completely missed accuracy and repeatability.

I wish u had tested the accuracy to the grams. I had a scale that was perfect, then it broke. I bough a new one, but this one is a pain!!! Specially if i’m measuring yeast for example! 7g is all i need, but it keeps reading for example 5 even if i add more and more! If i dont tap on it or remove and replace I won’t get an accurate measurement.

After buying the scale I am having a hard time finding a reference giving food serving sizes given in oz/grams. Most all are given in cups or equivalent volume amounts. Any help would be appreciated.

Unless a recipe was originally written using mass/weight, it's hard to convert because different ingredients have different densities. A cup of flour and a cup of sugar, for example, have different weights even though they're both one cup. Here, though, is a starting point: www.calculateme.com/recipe/recipe-volume-to-weight-conversion
