My big thick sheet pan finally warped the other day. I was making butter cookies, and when I checked on them after five minutes, they'd all been tossed around. Fortunately, none of them stuck together, and they all stayed in the pan. I get the sense that once a pan warps one time, it's probably going to keep doing that.

Since the interior width of most ovens are less than 26" (usually 25" or less) why are half sheets 13"? You can only fit one per rack. Wouldn't it be better if they were 12" or 12.5"?
@SublimeSimplicity8 жыл бұрын
SeikiBrian Thanks, I understood the origin, I was more asking about the logic of applying a commercial standard to a product for home use. The logic of a half sheet is that you can put two side by side in a commercial oven. I'd think you'd want a pan for your home you could do the same.
@seikibrian86418 жыл бұрын
SublimeSimplicity Ah, got it. Since most home cooks are cooking for fewer mouths than commercial cooks, one pan is usually enough. There are, of course, smaller pans available for home cooks, they're just not called half sheets. Jelly Roll Pans come to mind. I don't think I've seen a wire rack for those, though.

Isn't getting food in contact with aluminum considered hazardous? Besides, how do you wash aluminum sheets if they cannot be washed in a dishwasher as it would start to dissolve aluminum?

Yes, if they're not cared for properly they can rust. Some people just toss everything into a dishwasher with harsh detergent. Don't do that. Dishwashers are for dishes. Good cookware and bakeware should be hand washed and thoroughly dried, even if it says "Dishwasher Safe" on the label.

Nordic ware is aluminium. And aluminium is now recognised as contributing to Alzheimer's. "Nordic ware is aluminium. And aluminium is now recognised as contributing to Alzheimer's" Recognized by whom? The same people who claim that vaccines are causal in autism. There's no science to back that up.
@lordgarion5145 жыл бұрын
@@seikibrian8641 While the link hasn't been "proven", there are now quite a few studies giving evidence that it just might have something to do with it. And never mind the fact that aluminum is a very well known neurotoxin in general. (that means it's toxic to neurons) And aluminum has been shown to cause other problems as well. From the National Institute of Health. www.ncbi.nlm.nih.gov/pmc/articles/PMC3056430/ Whether it causes Alzheimer's or not, we know for a fact that aluminum does cross the blood-brain barrier, and we know for a fact that aluminum is poisonous to your brain. So I really wouldn't be talking like you are if I were you. Aluminum *IS* bad for you, and aluminum does leach into food during cooking. And that's what the actual science says.

Truthfully, the Libertyware cooling rack (16.5" x 12") does not work "perfectly" with the Nordicware Bakers Half Sheet pan (16.5" × 11.5"). The internal measurements of the rack are off in the excess by 1/2" and therefore it doesn't fit perfectly. I purchased multiples of both and was very disappointed with America's Test Kitchen's recommendation.
@lordgarion5145 жыл бұрын
This is an older video. There's a post on th ATK site from February explaining they changed the rack and it's no longer the winner. You have to keep in mind that ATK is a tv show and a paid website. My problem is our water system is very, very hard and will blacken aluminum pans
@lordgarion5145 жыл бұрын
The black is oxidation. Hard water shouldn't cause it. If you don't mind me asking, What do you cook on it? And do you put it in a dishwasher? Acidic foods and washing in a dishwasher will most definitely increase the rate of oxidation, but TBH, any non anodized aluminum will get some oxidation on it.
